Cantonese Red Bean Paste Mooncake recipe - Simple Chinese Food image

This is the first time to make moon cakes this year. I was thinking of making a few and I could taste them. Who knew it would be out of hand~~ So far, I have made 102 moon cakes, including egg yolk and lotus paste. , Five kernels, cranberry, red bean paste, and the kidney bean fillings made before. A few days ago, I bought 100 grams of big moon cake molds online, and made 26 big moon cakes with five kernels. It looks really big, without the delicate and cute feeling of small moon cakes~~
The red bean paste was fried when I was making bread before, and I fry it again. I added sugar and oil. The fried is okay and the sweetness is just right. The pattern of this square mold is quite beautiful, but it is not convenient to use. You have to make the cake blank into an oval shape to put it in the mold. Moreover, the pattern and the mold are not tightly attached, and there are always cakes. The skin is embedded in that gap. If it doesn't come out, the dough will come out of the moon cake mold.
The color of this furnace moon is very good, that is, when the finished picture was taken today, the sun came out for a while and hid in the clouds, the light was very bad, and I didn't take it well! regret!

100 g Flour
75 grams Invert syrup
2 grams Jianshui
25 grams Peanut oil
Right amount Red bean paste

Steps:

  • Wash the red beans and soak in water for more than 4 hours
  • Put it in an electric pressure cooker, add water to cover the beans, and boil them
  • After cooling, pour into a cooking cup, stir finely, pour into a non-stick pan, add appropriate amount of white sugar, and fry on low heat
  • Add peanut oil several times during this period. Stir frequently to prevent muddy bottom
  • Stir-fry until the oily state is dry and hard as shown in the picture
  • Put the inverted syrup, peanut oil and liquid soap into a bowl and mix well
  • Sift in the flour
  • Stir evenly
  • Put it in a fresh-keeping bag and let it stand for an hour before use. Prepare the bean paste filling to cool down (it’s better to refrigerate the bean paste)
  • My mold is 50 grams, made according to the ratio of 3:7, 15 grams per serving of pie crust, 35 grams per serving of red bean paste, respectively rounded, covered with plastic wrap
  • Take a portion of the pie crust, flatten it, and wrap it with red bean paste
  • Slowly push the pie crust, and finally use the tiger’s mouth to slowly gather it
  • Squeeze tightly at the interface and round
  • Sprinkle an appropriate amount of flour and roll again to prevent sticking. Shape the cake into an oval shape and put it into a mold that has been sprinkled with dry powder (sprinkle the dry powder in the mold, shake it evenly, and then pour out the excess powder)
  • Press out the shape in the baking tray, preheat the oven, 190 degrees
  • After preheating, put it in the middle of the oven and bake at 190 degrees (if it is freshly baked, do not spray water, if the weather is very dry, spray water once) bake for 5 minutes, take it out and let cool
  • Preheat the oven again, and use a brush to gently brush a layer of egg liquid on the protrusions of the moon cake pattern (do not store egg liquid in the recesses, otherwise the pattern will not be obvious), send it into the preheated oven, and then fire the middle layer up and down. Bake for 5 minutes, take it out, let dry for 5 minutes
  • Preheat the oven for the last time, bake at 190 degrees for about 5 minutes, and the coloring is satisfactory. Take it out, let cool and seal

1 cup Chinese red beans ( ,azuki bean ,around 200g)
3 cups water
1 cup sugar
1 tiny pinch of salt
1 cup Chinese red beans ( ,azuki bean ,around 200g)
3 cups water
1 cup sugar
2 tbsp. butter or vegetable oil ( ,28 to 30g)
a tiny pinch of salt

Steps:

  • Wash the red beans and soak the dried red beans at least 8 hours or overnight. Longer soaking time can shorten the cooking time.
  • Drain and add around 3 cups of water in a high pressure cooker along with the beans.
  • Cook the beans for around 40 minutes or until quite soft.
  • Smashed version
