3 tablespoons unsalted butter
1 small onion, finely chopped
1 garlic clove, minced
1 large egg
1 1/2 cups buckwheat groats (also known as kasha)
3 cups Homemade Beef Stock, or low-sodium canned beef stock
Coarse salt and freshly ground pepper

Steps:

  • In a large straight-sided skillet with a lid, melt butter over medium-high heat. Add onion and garlic. Cook, stirring occasionally, until translucent, about 3 minutes. Meanwhile, lightly beat egg in a medium bowl. Add groats, and stir until well coated. Add groats to skillet, and increase the heat to high. Cook until the egg has dried on the groats and the kernels are separated, about 2 minutes. Add stock, and season with salt and pepper. Reduce the heat to low, and simmer, covered, until tender and all of the liquid has absorbed, 7 to 10 minutes.

1-cup wheat groats/grits
2-cups water
50 g unsalted butter
½ tsp. salt.

Steps:

  • As almost every grain recipe, we will start with rinsing wheat groats under running water or washing by covering groats with cold water in a deep bowl and then draining it several times. We do this to prevent groats from sticking at the end of boiling.
  • Pour the necessary amount of water to the pot and put on the high heat. Wait until the water boils and season with salt.
  • Add rinsed wheat groats to the boiling water.
  • Stir groats from time to time while you wait for the water to boil. Get rid of all the foam that forms in the process.
  • When water with groats reboils, lower the heat and cook porridge for 20 minutes. To ensure that your porridge cooks through evenly and does not burn stir wheat groats every 5 minutes or so.
  • When all water cooks of and you know that groats are cooked through, add butter, cover the pot with a lid and set it aside to rest for 10-15 minutes before serving.
