There is something just so comforting about meatloaf. It reminds me of my childhood. I guess some dishes never run out of style. They are timeless. This is the case with meatloaf.

2 lbs 90% lean ground beef
½ white onion, finely chopped
2 garlic cloves, minced
½ cup red bell pepper, finely chopped
2 tablespoons chopped parsley
1 cup seasoned breadcrumbs
3 eggs, beaten
? cup of milk
½ cup sharp Cheddar cheese, shredded
Salt and pepper to taste
½ cup ketchup
2 tablespoons brown sugar
2 teaspoons mustard

Steps:

  • Preheat the oven to 350 F. Finely chop the onion, bell pepper, and parsley, and mince the garlic. I try to chop everything as finely as possible, so no one gets a big chunk, and the veggies are evenly distributed among the meat.
  • Using a medium-sized bowl, mix the veggies with the beaten eggs, milk, and shredded cheese. Give it all a good mix, so you don’t get many veggies in some bites and none on others.
  • Add the ground beef and breadcrumbs to the egg mixture and mix it until everything is well combined but not overmixed. I like to use my hands. That way, I can control better the mixing process. Overmixing can make for a tough meatloaf, so be gentle.
  • Put the meat mixture inside a loaf pan and bake for 30 minutes, uncovered.
  • While the meatloaf is baking, mix the ketchup, mustard, and brown sugar in a small bowl. Mix it until you feel most of the sugar has dissolved. Set it aside.
  • After 30 minutes, carefully take the meatloaf out of the oven and cover the top with the ketchup mixture. Distribute it evenly all over the top.
  • Continue baking the meatloaf, uncovered, for another 30 to 40 minutes. Let it sit for 15 minutes before cutting it after you take it out of the oven. This way, it won’t fall apart when you cut it.

1 large egg
1/2 cup ground pork rinds ((1 oz whole pork rinds))
1/4 cup grated Parmesan cheese
1 tbsp Worcestershire sauce
2 tbsp tomato paste
2 tbsp water
1/2 tsp Worcestershire sauce
5 drops liquid stevia
1 tsp white vinegar
pinch of salt, onion and garlic powder

Steps:

  • Preheat the oven to 375°F degrees and grease a loaf pan (if using).
  • Add all meatloaf ingredients to a large bowl. Using your hands, combine well. Form the mixture into a loaf shape and place on a greased baking dish or press into your greased loaf pan and flip out on the baking sheet.
  • Bake for 20 minutes.
  • While the meatloaf is baking, add all topping ingredients to a small bowl and whisk together.
  • Remove meatloaf from oven and top with the ketchup mixture. Bake for an additional 10-15 minutes or until the meatloaf reaches 165°F.
  • Remove from the oven and allow to rest for 15 minutes to let the juices settle before slicing and serving.
  • Best stored in an air tight container in the fridge up to 5 days.
