These super easy veggie pinwheel sandwiches make easy and tasty appetizers or snacks. They're the perfect pre-dinner party pleaser or a quick lunch-box filler. Cream cheese anchors the red peppers and arugula to the tortillas. Allowing the tortillas to stand a few minutes before slicing get the peppery arugula and zesty red peppers a chance to meld their flavors. If arugula feels too peppery, us spinach in its place. With a short 10 minute prep time, these are easy to make again when the platter is empty, which it quickly will be.

0.5 cup(s) Low fat cream cheese tub-style
2 item(s) 10" high fiber, low carb flour tortilla(s)
0.25 tsp Italian seasoning
0.25 tsp Garlic salt
0.5 cup(s) Arugula stems removed
0.5 cup(s) Roasted red peppers (packed in water)

Steps:

  • In a small bowl, combine cream cheese, Italian seasoning and garlic salt.
  • Place tortillas on a flat work surface. Spread each with 1/4 cup of cream cheese mixture. Top each with 1/4 cup of arugula and 1/4 cup of peppers. Roll up and tightly wrap in plastic wrap; chill 1 hour to allow flavours to blend.
  • Remove wraps and slice into 1-inch pieces; arrange on a platter and serve. Yields 2 pieces per serving.

4 oz. reduced-fat cream cheese, room temperature
1 1/2 teaspoons ranch seasoning
2 tablespoons green onions, chopped
1/4 cup reduced-fat Mexican cheese, shredded
3 slices center cut bacon, cooked and chopped
1 boneless, skinless chicken breast, cooked and chopped
3 Ole Xtreme high fiber tortillas

Steps:

  • Mix together the cream cheese, ranch seasoning, green onions, Mexican cheese, bacon and chicken.
  • Lay out a tortilla and add 1/3 of the cream cheese mixture. Spread it out and roll up the tortilla. Repeat with the remaining ingredients.
  • Cut the ends off then cut each tortilla into 6 pinwheels.
