Steps:
- In a bowl, whisk together the two flours, walnuts, baking powder, baking soda and salt.
- In a smaller bowl, whisk together the eggs, buttermilk, butter and maple syrup.
- Pour the liquid mixture over the flour mixture and stir just until combined.
- Heat the waffle iron.
- For each waffle, brush lightly with vegetable oil.
- Pour in sufficient batter to spread to the edges (I have a Belgian waffle iron so for this type you would need approximately 1-1/2 cups of batter.).
- Close the lid and cook until crisp, golden and the steam stops, about 4 to 5 minutes.

- In a large bowl, stir together the flours, baking powder, cinnamon, nutmeg, and salt. Add the pear and walnuts and toss to coat them with the dry ingredients. In a small bowl, whisk together the milk, egg white, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until combined. The batter will be thick. Spray a waffle iron well with nonstick cooking spray and preheat. Add ½ cup of the batter to the waffle iron and use a spoon or spatula to spread it across the surface. Close waffle iron and cook for 3 to 4 minutes, until the waffle is browned and cooked through. Repeat with the remaining waffles. Serve warm with your favorite toppings.
