3 eggs
2/3 cup dark brown sugar, firmly packed
1/4 teaspoon salt
1/4 cup butter, melted
1 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon orange zest, finely grated
1/4 teaspoon nutmeg, ground
1 cup walnuts, chopped
1 cup raisins, dark
1 pie crust, 9-inch

Steps:

  • Heat the oven to 375 degrees.
  • Crack the eggs over a large bowl. Add the brown sugar, salt, melted butter and corn syrup and whisk together until well-blended.
  • Stir in the vanilla, orange zest and nutmeg, then stir in the nuts and raisins.
  • Pour the filling into the pie crust.
  • Place the pie in the oven and bake until the filling is set, 35 to 40 minutes; the pastry should be golden brown and a knife inserted in the center should come out clean. Remove the pie and cool it on a wire rack. Serve slightly warm or cool.

225 grams Pastry flour
1 teaspoon Baking powder
50 grams honey
50 grams sugar
2 egg yolks
1 egg
150 grams cold butter
butter (for the mold)
Pastry flour (for dusting)
1 kilogram Apple
3 tablespoons lemon juice
4 tablespoons honey
0.5 teaspoon cinnamon
1 packet Vanilla sugar
1 package vanilla pudding mix
60 grams Walnut (coarsely chopped)
50 grams raisins

Steps:

  • For the pie dough: Combine the flour and baking powder, make a well in the center, add the honey, sugar, egg yolks and egg to the well, distribute the chopped butter around the edges and knead rapidly until smooth. Cover with plastic wrap and chill for about 30 minutes. Halve the dough and roll out each half into a circle, slightly larger than the pie dish. Line a greased and floured pie dish with 1 circle, trimming the edges. 
  • For the filling: Rinse the apples, peel, cut into quarters, core and slice. Toss with the lemon juice. Add the honey, cinnamon, vanilla sugar, pudding powder, raisins and walnuts. Transfer to the pie shell, cover with the pie lid and press the edges with a fork to seal. 
  • Prick with a fork several times and bake in a preheated oven at 180°C (approximately 350°F) for about 50 minutes. Remove from the oven and let cool in the dish.

  • Pulse flour, sugar, cinnamon and salt in food processor to mix. Cut butter into 1/2-in. pieces, add to flour and pulse until mixture is crumbly. Add water; pulse just until dough begins to separate from sides of bowl. Gather and divide dough into two balls, one slightly larger than the other. Flatten into disks, wrap and refrigerate 30 minutes. Place oven rack in lowest position. Place a square of foil on rack to catch any drips. Heat oven to 375ºF. You'll need a 9-in. pie plate. Roll smaller disk of dough on lightly floured piece of wax paper to about a 12-in. round. Invert wax paper and dough into pie plate and peel off wax paper. Roll out larger piece of dough on lightly floured wax paper to about a 13-in. round. With a small cookie cutter, cut out three vents near center of pastry round; set aside. Peel, halve and core apples. Cut into 1/4-in. slices, then halve crosswise. Toss apples with filling ingredients; mound in pie shell. Invert wax paper with pastry round over filling, centering the vents. Remove wax paper. Trim any overhanging pastry and pinch together edges, fluting if desired. Brush with egg wash and sprinkle with sugar, if using. Bake 20 minutes. Reduce heat to 350ºF. Bake 50 minutes or until apples in center feel tender. Cool on wire rack at least 1 hour before serving. Serve with whipped cream, if desired.
