1 tablespoon vegetable oil
1 onion (chopped)
14 ounces firm Tofu (chopped)
1 teaspoon Turmeric
0.375 cup hot vegetable stock
1 tablespoon chopped parsley
salt
peppers
pea shoots

Steps:

  • Heat the oil in a pan and cook the onion until soft, but not browned.
  • Add the tofu and turmeric and mix well.
  • Add the stock and bring to a boil. Reduce the heat and simmer until all the stock is absorbed.
  • Stir in the parsley and season to taste with salt and pepper.
  • Serve garnished with pea shoots.
