Vegan Beer Cheese Dip – Vegan Travel Eats image

This beer cheese dip is the perfect snack to make for a party or a night in front of the tv!

Number Of Ingredients 9

¾ cup vegan brown ale (I used New Belgium Fat Tire)
1 8oz package of vegan cream cheese (I used Tofutti)
1 tsp Dijon mustard
Salt
1 cup raw cashews, soaked at least 2 hours, overnight or quick-soaked (add cashews and water to cover in a small saucepan, bring to a boil cover and let sit for 15 minutes)
½ cup veggie broth
2 tbs nutritional yeast
2 cloves garlic
2 tbs white miso

Steps:

  • Add Dijon mustard, pinch of salt, raw cashews, veggie broth, nutritional yeast, garlic, and white miso to a high-speed blender until completely smooth, about 1-2 minutes. Scraping the sides of the blender down so you don’t miss anything!
  • Heat a medium saucepan over medium heat, add cream cheese and melt, stirring to help it melt evenly.
  • Pour in the blender contents, scraping the sides to get all the good stuff out, stir to combine and then add beer in 3 batches, stirring to combine completely each time.
  • Let it cook and thicken for another 5 minutes, then serve hot
