zest and juice of ½ fresh large orange
3 medium eggs (separated)
4,5 oz caster sugar ((125 g))
6,5 oz self-raising flour ((185 g), sifted)
3 tbsp very soft unsalted butter ((45 g))
2 drops vanilla extract
salt

Steps:

  • 1) First off: add the soft butter, the sugar and the egg whites to the bowl of the KitchenAid Stand Mixer Mini.
  • 2) Attach the wire whip. Lower the mixer head. Then set the speed at 4 and mix the ingredients for 2 minutes until pale and airy.
  • 3) Adjust the speed to 6 and whip the ingredients for 3 more minutes.
  • 4) Then add the self-raising flour, the orange zest and juice, a pinch of salt, the vanilla extract and the egg yolks to the mixing bowl. Mix the ingredients at speed 4 for 2 minutes.
  • 5) Then adjust the speed to 6 and whip the ingredients for 3 more minutes.
  • 6) Remove the wire whip. Pour the cake batter in a buttered springform pan of 6-inches (15 cm) in diameter. Bake the orange cake in a preheated oven at 338°F (170°C) for 45 minutes until set in the middle.
  • 7) Then remove the cake from the oven and let it cool down fully in its tin. Cut the cake into wedges and serve.

Yield 1 - 10 inch Bundt cake

Number Of Ingredients 9

1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package instant lemon pudding mix
¾ cup orange juice
½ cup vegetable oil
4 eggs
1 teaspoon lemon extract
? cup orange juice
? cup white sugar
¼ cup butter

Steps:

  • Grease a 10 inch Bundt pan. Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in 3/4 cup orange juice, oil, eggs and lemon extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 60 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • In a saucepan over medium heat, cook 1/3 cup orange juice, sugar and butter for two minutes. Drizzle over cake.

  • Heat oven to 375°F. Lightly grease a 15 1/2 x 10 1/2-inch jelly-roll pan. Line bottom and sides with waxed paper; grease paper. Beat cream cheese and sugar with an electric mixer until smooth. Beat in eggs, milk and vanilla just until blended. Spread evenly in lined pan. Beat eggs, granulated sugar, orange peel and vanilla in a large bowl (see Note) with an electric mixer on high speed 8 to 12 minutes until very thick, pale and at least tripled in volume. Sprinkle with flour. Fold until just blended. Add butter and fold until just blended. Spread evenly over filling in pan. Bake 19 to 21 minutes or until cake springs back when touched in center. We used three varieties to vary size of slices. Use leftovers to garnish other desserts or as an accompaniment to ham or poultry. Scrub skins of 2 oranges, 2 clementines and 4 kumquats. Slice in 1/8-inch-thick rounds. Bring 2 cups each water and sugar to boil in a wide skillet. Add 1 citrus type at a time in a single layer. Reduce heat and simmer uncovered 20 to 40 minutes until translucent. Remove to a bowl with slotted spoon; repeat with remaining fruit. Pour syrup over slices (add a little water if the syrup is too thick) and refrigerate up to 3 months.
