This make-ahead casserole is the perfect fall-flavored side dish to accompany a Thanksgiving turkey or roast ham. It is delicious!

6 cups cubed turnips
2 tablespoons butter
2 eggs, beaten
3 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
¾ teaspoon salt
? teaspoon ground black pepper
1 pinch nutmeg
½ cup fine bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.
  • Combine flour, sugar, baking powder, salt, pepper, and nutmeg in a bowl and stir into turnips. Transfer mixture to a baking dish.
  • Combine bread crumbs and melted butter and sprinkle on top of turnip mixture.
  • Bake in the preheated oven until light brown on top, about 25 minutes.

2 pounds turnips, peeled and chopped
¼ cup butter or margarine, divided
1 small onion, finely chopped
½ cup milk
1?½ cups (6 ounces) grated white Cheddar cheese, divided
½ teaspoon salt
½ teaspoon pepper
? cup Italian-seasoned breadcrumbs

Steps:

  • Combine turnips and water to cover in a saucepan. Bring to a boil; cook 20 minutes or until tender. Drain well; transfer to a large bowl, and mash with a potato masher.
  • Melt 1 tablespoon butter in a skillet over medium heat; add onion, and sauté 3 minutes or until tender.
  • Add onion, milk, 1 cup Cheddar cheese, salt, pepper, and remaining 3 tablespoons butter to mashed turnips, stirring to combine. Spoon into a lightly greased 11- x 7-inch baking dish. Sprinkle evenly with breadcrumbs and remaining 1/2 cup Cheddar cheese.
  • Bake at 350° for 30 minutes or until lightly browned.
