Stuffed Turkey Roll Recipe: How to Make It image

When a friend gave me some ground turkey to use up, I looked for an inventive way to prepare it. I found this recipe while scouring through my collection. My family loves it because of the stuffing in the middle. For a variation, I sometimes use cheese on top instead of bacon.—Patricia Eckard, Singers Glen, Virginia

1 egg, lightly beaten
1/2 cup quick-cooking oats
1/2 teaspoon salt
1/8 teaspoon pepper
1 pound ground turkey
1/4 cup chopped onion
1/4 cup chopped celery
3 tablespoons butter
2 tablespoons water
1/2 teaspoon rubbed sage
1/4 teaspoon ground thyme
2 cups seasoned stuffing cubes
2 bacon strips, halved

Steps:

  • In a large bowl, combine the egg, oats, salt and pepper. Crumble turkey over mixture and mix well. Pat into a 12x9-in. rectangle on a piece of heavy-duty foil; set aside., In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in water, sage and thyme. Add stuffing; stir until well coated. Spoon over turkey to within 1 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling., Place loaf, seam side down, in a greased 9x5-in. loaf pan. Place bacon strips over top. Bake, uncovered, at 325° for 60-70 minutes or until meat is no longer pink and a thermometer reads 165°.

Easy wrap recipe. Great for snacks. Customize until your heart's content. This recipe is forgiving. I eyeballed everything until it was how I wanted it, so these measurements aren't exact. Can't wait to hear what modifications everyone comes up with.

¾ cup fresh spinach, chopped
¼ cup cream cheese, softened
¼ cup shredded Cheddar cheese, or more to taste
4 pickled peppers, chopped
½ spring onion (green part only), chopped, or more to taste
2 teaspoons garlic powder
¾ teaspoon ground black pepper
2 pinches red pepper flakes
2 flour tortillas
½ pound sliced deli turkey meat

Steps:

  • Mix spinach, cream cheese, Cheddar cheese, pickled peppers, spring onion, garlic powder, black pepper, and red pepper flakes together in a bowl. Spread cream cheese mixture, about 1-inch wide, over the top portion of each tortilla, reserving about 1 tablespoon cream cheese mixture for sealing.
  • Arrange turkey onto each tortilla below the cream cheese mixture section. Spread a thin line of reserved cream cheese mixture below the turkey section of each tortilla for sealing. Starting at the end with the most cream cheese mixture, roll each tortilla around the filling, sealing together with the opposite end with small amount of cream cheese mixture. Cut 1/2-inch-wide slices from roll creating turkey 'sushi' rolls.

  • Preheat the oven to 200°C (180°C fan) mark 6. Combine the garlic and butter. Season, then rub over the turkey breasts. Lay one breast on a board and place the other on top so the thickness of the turkey roll will be roughly even. Stretch the bacon slices over the turkey, overlapping them a little. Tie the roll together with string, spacing knots 5cm (2in) apart. Put on a large wire rack over a large roasting tin.

    Roast for 11/2 hr or until the juices run clear when a skewer is inserted into the thickest part of the turkey.

    Transfer the turkey to a board, cover loosely with foil and rest for about 20min before carving. Serve with vegetables, sauces and stuffing of your choice.

    Day-After Pie:

    Heat 1tbsp oil in a large pan and cook 1 finely chopped onion for 10min until softened. Add 150g sliced mushrooms and fry for 5min. Stir in 21/2tbsp flour and cook for 1min. Gradually stir in 300ml each chicken stock and double cream. Bring to the boil, stirring, then simmer for 5min to thicken. Stir in 200g chopped cooked turkey, 150g chopped ham and 1tbsp wholegrain mustard. Season. Tip into an ovenproof serving dish, cover with mashed potato and cook in a preheated 200°C (180°C fan) mark 6 oven for about 30min until golden. Serves 6
