This cheese ball is good any time of the year. I've made it several times for parties and it always went over well with my guest. I've even made it up and gave it out as gifts.

1 - (8 ounce) package of cream cheese softened
1 - (18-1/4 ounce can) crushed pineapple, drained
2 cup(s) (8 ounch) shredded mild chedder cheese
1/2 cup(s) chopped pecans
1/4 cup(s) chopped dried apricots
1 teaspoon(s) chopped crystallized ginger
- flaked coconut

Steps:

  • Combine cream cheese and pineapple, mixing until well blended.
  • Add all remaining ingredients except coconut.
  • Empty ingredients onto a large sheet of clear wrap and roll into a ball and seal.
  • Place in frigerator for several hours.
  • Remove from refrigerator and unwrap and roll into a ball and roll in more pecans or coconut.
  • Place on a serving platter along with an assortment of crackers.
  • * My family liked it better rolled in coconut.

Optional: Toast the almond slices for an extra nutty flavor. You can also use chopped pecans or walnuts. Nut allergy? Roll this cheese ball in chopped banana chips right before serving.

Number Of Ingredients 6

8-ounce package cream cheese, at room temperature
1/3 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup fresh pineapple, finely chopped (you can also use canned pineapple that has been thoroughly drained)
Zest from 1 small lemon
1/2 cup sliced almonds

Steps:

  • Mix cream cheese, powdered sugar, vanilla, pineapple, and lemon zest in a mixing bowl. Place in the fridge for at least an hour to harden.
  • Place sliced almonds on a piece of plastic wrap or parchment paper.
  • Make the cream cheese mixture into a ball: I find that this is easiest done with damp hands. Take cream cheese mixture and carefully form it into a ball. Roll the ball in sliced almonds. Place on a serving plate or wrap in Saran wrap and place in the fridge.
  • Serve with homemade pear chips, cinnamon pita chips or crackers.
