This recipe comes from Home Joys blog as does the picture. A batter that is poured in a pan maybe more like a crepe or pancake as she says but they are good. Worked will with all the taco fixings and burrito fixings. We enjoyed them today for lunch. Sure beats the rolling Going to make scrambled eggs, sausage and cheese for breakfast tomorrow morning with the left overs. Quick and easy!!!

Number Of Ingredients 5

1 cup(s) flour see note
1/2 cup(s) corn meal
1-1/2 cup(s) water
1 large egg
1 teaspoon(s) salt

Steps:

  • whisk ingredients together till smooth.
  • lightly oil pan ( i used spray)
  • Heat pan on medium for one minute
  • add 1/2 cup batter in pan, with back of spoon swirl batter into a very thin circle.
  • Allow to set then flip and fry other side
  • cool on wire rack. enjoy
  • NOTES: I used all white flour and she used half white and half wheat..

These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1?½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

Stir to combine.Spread cream cheese in a thin layer over the tortillas. Lay ingredients down the middle of the tortilla: for the turkey rollup, use turkey, carrots, and cucumber. For a "salad" rollup, use lettuce, carrots, cucumber, and avocado. Let the veggies extend past the edges on either side. Roll up the tortillas as tightly as they'll go, then wrap each rollup in plastic wrap and refrigerate for one hour. To slice, cut each rollup exactly in half, then line up the two halves and cut them in half again. Stand the end pieces up so that the veggies stick out the top.
