Here, we toss the most nutritious part of potatoes, their skins, with olive oil, seasonings and Parmesan cheese and bake them to golden perfection.

5 large russet potatoes
1 teaspoon extra-virgin olive oil
½ teaspoon paprika
¼ teaspoon salt
? teaspoon cayenne pepper
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
  • With a paring knife, remove skin and about 1/8 inch of the flesh from potatoes in long 1- to 2-inch-wide strips. (Reserve peeled potatoes for another use.) Toss the potato skins with oil, paprika, salt and cayenne. Place in a single layer on the prepared baking sheet; sprinkle with Parmesan.
  • Bake until tender and golden, 25 to 30 minutes.

bunch radishes (about 7 medium radishes) 

1 tbsp.

vegetable oil

1/2 tsp.

garlic powder

Kosher salt

Freshly ground black pepper

Ranch, for dipping

Steps:

  • Preheat oven to 225°. If you'd like to remove the skins, use a vegetable peeler to remove all red skin from radishes. Using a mandoline, thinly slice radishes and place in a large bowl. Add vegetable oil and garlic powder to radishes and season with salt and pepper. Toss to coat, then spread in an even layer on large baking sheets. Be sure none of the radishes are overlapping. Bake until chips are crisp and slightly golden, 1 hour to 1 hour and 15 minutes. Let cool 5 minutes, then serve with ranch for dipping. If you'd like to remove the skins, use a vegetable peeler to remove all red skin from radishes. Using a mandoline, thinly slice radishes and place in a large bowl.  Add garlic powder to radishes and season with salt and pepper. Toss to coat. Working in batches, add to air fryer and cook at 350° for 6 to 7 minutes, shaking the basket halfway through, until chips are golden and crispy.

  • Set the oven to broil. Return the wedges to the foil-lined baking sheet. Paint a bit of bacon fat on each, then top with cheese and bacon. Place under the broiler until the cheese is bubbling. Place the skins on a serving plate. Season with salt and pepper. Spoon a teaspoon or so of sour cream on each and scatter the scallions over the plate. Serve with hot sauce.

  • Preheat oven to 400 degrees. Scrub potatoes clean and allow them to dry. With a paper towel (or just with your hands) rub the skin of the potatoes with 2 tablespoons canola oil so that they're nice and moist. Place potatoes on a baking sheet and bake until skin is crisp and potatoes are tender, about 30 to 40 minutes. Remove the pan and allow to cool until you can handle the potatoes. Cut potatoes in half lengthwise. Scoop out the insides, leaving a little bit of potato in the skins. Melt the butter with 2 tablespoons canola oil, then brush both the outside and the inside of the potatoes. Sprinkle the inside lightly with salt. Place potato halves face-down and return to the oven for 5 to 8 minutes. Using tongs, turn the potatoes over and continue to bake until the edges of the potatoes start to turn golden brown. Remove from oven. Sprinkle the insides of the potato skins with cheddar, then sprinkle on the chopped bacon. Return to the oven long enough for the cheese to melt, about 3 to 4 minutes. Serve immediately with sour cream and green onions. Yum!
