Number Of Ingredients 9

1 puff pastry sheet
1 large tomato
1 beaten egg
1/2 cup Parmesan, gouda, or feta
1/2 tsp salt
3/4 cup mozzarella cheese
2 tbsp olive oil
1 clove fresh garlic, minced
fresh basil

Steps:

  • Slice tomatoes fairly thin and place on paper towel. Sprinkle with salt. Let sit for over 30-45 minutes
  • Place puff pastry sheet on baking sheet lined with parchment paper.
  • Brush puff pastry with beaten egg.
  • Cover puff pastry with parmesan cheese.
  • Poke with a fork all over.
  • Place puff pastry in 425 degree oven and bake for 20 minutes. Let cool a bit.
  • Meanwhile, use a paper towel to dab off the liquid on the top of the tomatoes. Place tomatoes on top of cooled pastry.
  • Cover with mozzarella cheese.
  • Mix olive oil and garlic together. Brush on top of cheese.
  • Bake the tart for 10-15 more minutes.
  • After removing from oven sprinkle with fresh basil.

2 lb. tomatoes, thinly sliced
Kosher salt
Cooking spray
1 sheet frozen puff pastry, thawed according to package directions
3/4 c. crumbled feta
1/4 small red onion, thinly sliced
Freshly ground black pepper 
Pinch crushed red pepper flakes
1 large egg, lightly beaten
Extra-virgin olive oil, for drizzling

Steps:

  • Preheat oven to 400° with a rack in the middle position. Arrange tomatoes on a paper towel-lined baking sheet. Sprinkle generously with salt and let sit 10 minutes; pat dry with paper towels. Lightly coat a large baking sheet with nonstick cooking spray. Unfold thawed puff pastry and place on prepared sheet. Prick with a fork all over, leaving a ½” border around the edges. Top with tomato slices, overlapping as necessary and avoiding the border, feta, and onions. Season with salt, pepper, and a pinch of red pepper flakes. Brush edges with beaten egg. 
  • Bake until golden, about 40 minutes. 
  • Drizzle with olive oil before serving.
