Tofu Cake - A Dairy Free Chocolate Cake Recipe image

Number Of Ingredients 10

12.5-ounce (350g) packet of firm silken tofu
1 and 3/4 cups (220g) flour (we prefer all-purpose flour)
1 cup (95g) of unsweetened cocoa powder
1 and 1/2 tsp baking soda
1 and 1/2 tsp baking powder
1/4 tsp of salt
1 and 1/4 cup (300ml) of maple syrup
1 cup (240ml) of almond milk
1/3 cup (80ml) of boiling water
3 tbsp of canola oil

Steps:

  • Preheat your oven to 375 degrees Fahrenheit (175 degrees Celsius).
  • Prepare two 9-inch cake tins by giving them a light greasing of vegan margarine.
  • Measure out the all-purpose flour into a large mixing bowl. Pour in your cocoa powder, baking powder, baking soda, and salt before mixing everything thoroughly.
  • Squeeze out the liquid from your block of silken tofu, using a tofu press. If you don't have a press, you can use a chopping board and paper towels!
  • Chop your pressed block of tofu into small cubes and place them into a food processor. Blend the tofu until you have a soft, creamy consistency.
  • When the tofu is creamy enough for your cake, pour in your flour mixture, the maple syrup, and the canola oil, then blend the ingredients.
  • Next, pour almond milk into the mix before blending again.
  • Add boiling water straight into the food processor and stir gently by hand until a thick yet smooth cake batter has formed.
  • Pour your cake batter directly into your two cake tins, evenly spreading the mixture across the two.
  • When your oven has preheated, place the cake tins in the centre for 30 minutes.
  • Remove the cake tins from your oven and allow them to cool on a rack for at least 20 minutes.
  • Remove from the cake tins after 20 minutes and allow to cool further.
  • Place the two halves together and serve your double-layered cake with some dairy-free icing, chocolate sprinkles, or any of your favorite vegan toppings!

1 pound tofu, sliced into 8 even pieces
2 tablespoons soy sauce
2 tablespoons agave nectar
1 tablespoon toasted sesame oil
1 teaspoon minced garlic
1 teaspoon minced fresh ginger
1 tablespoon sesame seeds, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
  • Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
  • Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
  • Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.
