These are yummy and simple-to-make finger sandwiches with turkey, artichokes, red pepper, and spinach. Best made the night before and great for parties, showers, and get-togethers.

½ cup low-fat cream cheese, softened
1 teaspoon minced garlic
½ teaspoon Italian seasoning
1 French baguette
4 ounces thinly sliced cooked deli turkey
1 cup baby spinach leaves, or to taste
½ red bell pepper, thinly sliced
½ cup artichoke hearts, drained and chopped
toothpicks

Steps:

  • Combine cream cheese, garlic, and Italian seasoning in a small bowl and set aside.
  • Slice top third off the baguette using a serrated knife. Scoop out some of the bottom half, leaving a 1/2-inch shell. Spread cream cheese mixture evenly over both halves. Layer turkey, spinach, red pepper, and artichokes on the bottom shell and place the other half on top. Wrap tightly in foil and refrigerate for 2 hours, or overnight.
  • When ready to serve, unwrap and slice the loaf diagonally into 1- to 2-inch portions. Secure each with a toothpick.

  • "Bring the water to boil in a large pot and add the tea bags. Turn off the heat and let steep 10 minutes. Add the salt and sugar, stirring until dissolved (turn the heat back on if necessary). Add onion, lemon and orange slices, peppercorns and garlic and let cool completely and then refrigerate until very cold. Add the brine to a clean bucket or very small cooler with ice and put the turkey breast side down. Leave the bucket in a cool place for 12 hours, flipping the turkey halfway through. Remove from the brine, rinse well, and pat dry. Use a slotted spoon to remove enough of the aromatics from the brine to fill the turkey cavity (rinse them well before stuffing). Preheat oven to 450. Tie the legs together, drizzle with olive oil, and sprinkle with black pepper. Roast 30 minutes and then reduce the temp to 350, roasting for ~2 more hours, until a thermometer inserted into the thigh reads 160F. Let rest for 15 minutes before carving."

  • For marinade, in a large bowl, combine 5 quarts water, chai tea mix and two orange wedges. Remove giblets from turkey; (discard or save for another use). Place a turkey-size oven roasting bag inside a second roasting bag; add the turkey. Place in a roasting pan. Carefully pour marinade into bag. Squeeze out as much air as possible; seal bags and turn to coat. Refrigerate for 18-24 hours, turning several times., Drain and discard marinade. Place apple and remaining orange wedges in cavity. Rub oil over skin; season with salt and pepper. Skewer turkey openings; tie drumsticks together., Place turkey breast side up on a rack in a roasting pan. Bake, uncovered, at 325° for 2-3/4 to 3-1/4 hours or until a thermometer reads 180°, basting occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.) Cover and let stand for 15 minutes before carving. Discard orange and apple slices., Add 1 cup water to the pan, scraping to loosen browned bits. Skim and discard fat; pour drippings into a small saucepan. Combine flour and remaining water until smooth; gradually stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with turkey.
