J&G Steak Sauce Recipe - Jean-Georges Vongerichten | Food ... image

A sort of cross between A1 and Lea & Perrins, two steak sauces Jean-Georges Vongerichten admires for their assertive flavors, the chef created this rich, tamarind-inflected blend for his J&G Steakhouse in Scottsdale, Arizona. The sauce will keep for weeks in the refrigerator. Amazing Steaks

Provided by Jean-Georges Vongerichten

Total Time 1 hours 0 minutes

Yield Makes 3 cups

Number Of Ingredients 19

1/2 cup golden raisins
1/2 cup hot water
1 tablespoon vegetable oil
2 shallots, thinly sliced
1 garlic clove, thinly sliced
1 red Thai chile, minced
1 cup sugar
2 tablespoons unsulfured molasses
1/4 cup tomato paste
2 tablespoons tamarind concentrate (see Note)
1 oil-packed anchovy fillet, chopped
1 chipotle in adobo sauce, minced
1 teaspoon fresh thyme leaves
1 teaspoon finely grated orange zest
1 cup red wine vinegar
1 star anise pod
Pinch of ground cloves
1 cup water, at room temperature
Salt

Steps:

  • In a small bowl, soak the raisins in the hot water until plumped, about 15 minutes.
  • Meanwhile, in a small skillet, heat the vegetable oil. Add the shallots and garlic and cook over moderate heat, stirring constantly, until browned, about 5 minutes. Add the Thai chile and cook 1 minute longer.
  • In a large saucepan, mix the sugar with the molasses and cook over moderate heat, stirring frequently, until the sugar is melted and lightly caramelized, about 8 minutes. Stir in the tomato paste, tamarind concentrate, anchovy, chipotle, thyme and orange zest and cook until a thick paste forms, about 1 minute. Stir in the vinegar, star anise, cloves and the shallot mixture. Add the raisins with their soaking liquid along with the room-temperature water. Bring the sauce to a simmer and cook over low heat, stirring occasionally, until the sauce has reduced slightly, about 10 minutes. Let cool slightly. Transfer to a blender and puree until very smooth. Season with salt and let cool completely before serving.

TAMARIND-GLAZED FLANK STEAK WITH CARROTS & DATES RECIPE ...

Tamarind-Glazed Flank Steak with Carrots & Dates Recipe ... image

Flank steak is the perfect candidate for cooking under the broiler. The high heat sears it on the outside while leaving the inside juicy. If you can't find flank, strip steak or hanger steak would work well, too.

Provided by Breana Lai Killeen, M.P.H., RD

Categories     Healthy Flank Steak Recipes

Total Time 40 minutes

Number Of Ingredients 13

1 pound carrots, cut into 1/2-inch pieces
1 large red onion, cut into 1-inch wedges
3 tablespoons extra-virgin olive oil, divided
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
1?½ tablespoons honey, divided
1 tablespoon tamarind paste or concentrate (see Tip)
2 teaspoons reduced-sodium tamari or soy sauce (see Tip)
1 teaspoon ground cumin, divided
1 pound flank steak, trimmed
1 tablespoon red-wine vinegar
? cup pitted dates, halved
2 tablespoons chopped fresh mint

Steps:

  • Position racks in upper and lower thirds of oven; preheat to 425°F. Line a rimmed baking sheet with foil.
  • Toss carrots and onion with 1 tablespoon oil and 1/4 teaspoon each salt and pepper on an unlined large rimmed baking sheet. Roast on the lower rack until soft but not browned, about 10 minutes. Remove from oven. Increase oven temperature to high broil.
  • Meanwhile, combine 1 tablespoon each oil and honey, tamarind, tamari (or soy sauce) and 3/4 teaspoon cumin in a small bowl. Reserve half for serving. Place steak on the prepared baking sheet and sprinkle with the remaining 1/4 teaspoon each salt and pepper. Brush one side with the tamarind mixture.
  • Broil the steak on the top rack, flipping once and basting with the tamarind mixture, until an instant-read thermometer inserted in the thickest part registers 145°F for medium, 8 to 10 minutes total. Transfer the steak to a clean cutting board and let rest for 5 minutes.
  • Whisk vinegar, the remaining 1 tablespoon oil, 1 1/2 teaspoons honey and 1/4 teaspoon cumin in a large bowl. Stir in the carrots and onion, dates and mint.
  • Slice the steak across the grain. Drizzle with the reserved tamarind sauce and serve with the vegetables.

  • In a small bowl, combine tamarind paste and 2 tablespoons hot water (the hotter, the better). Stir with a fork to break up tamarind paste and let stand for 15 minutes to soften further.  Working in batches, use the back of a large spoon to press tamarind mixture through a fine mesh strainer. Don't forget to scrape the tamarind purée at the bottom of your strainer into bowl as well! You should have about 1 tablespoon of tamarind purée and consistency should be similar to Sriracha. Discard solids that remain in strainer. Add fish sauce, sugar, and remaining 2 tablespoons hot water. Mix until sugar is dissolved. Sauce should be a drizzling consistency.  Add garlic and chilies, if using. Taste and adjust to your liking.  Set aside at room temperature to let flavors bloom. Sauce can be prepared hours ahead of time. Serve in individual dipping sauce containers.
