Lu Rou Fan, or stewed pork with rice, is a very common dish in Taiwan. It’s a simple and satisfying dish considered comfort food by many. Lu rou fan benefits from a good balance of fatty and non fatty cuts of pork so feel free to explore new and different parts of the pig.

1 1/4 lbs pork
4 shallots or 1 medium yellow onion
2 garlic cloves
4 shiitake mushrooms, sliced
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon dark soy sauce
1/4 cup water
1 star anise
1/2 teaspoon Chinese five spice powder
1 tablespoon cinnamon
2 inches piece ginger, sliced very thin
4 hard-boiled eggs, deshelled (garnish)
1 scallion, sliced (garnish)
hot cooked rice, as needed

Steps:

  • Cut pork into small cubes. Chop shallots and mince garlic.
  • Saute pork until brown. Remove meat (leave fat in pan) and saute the shallot and garlic on medium-high heat until lightly brown. Remove and saute mushrooms.
  • Add everything back into the pan, including the soy sauce, rice vinegar, dark soy sauce, water and spices (star anise, five spice, cinnamon, and ginger). Simmer for about 60 minutes or until tender. Add the eggs during the last 10-15 minutes.
  • Garnish with chopped scallion and sliced hard cooked eggs.

What’s better than a jammy egg? One that’s been sitting in a tangy-salty marinade of chiles, soy, mirin, and vinegar, like this classic star of Korean banchan. The longer you let them sit, the more flavor they’ll pick up, but if you only have an hour, serve egg quarters with some of the pickling liquid drizzled over for extra flavor.

6 large eggs
5 garlic cloves, peeled
3 dried chiles de árbol or 1 tsp. crushed red pepper flakes
¾ cup soy sauce
3 Tbsp. mirin (sweet Japanese rice wine)
2 Tbsp. unseasoned rice vinegar
Toasted sesame seeds (for serving; optional)

Steps:

  • Gently lower eggs into a large saucepan of boiling water. When water returns to a gentle boil, cook 7 minutes. Using a slotted spoon, transfer to a bowl of ice water and let cool 2 minutes (eggs may still be a little warm). Remove eggs from ice water and peel.
  • Meanwhile, bring garlic, chiles, soy sauce, mirin, vinegar, and 2 cups water to a boil in a medium saucepan. Reduce heat; simmer 5 minutes. Remove from heat and add eggs. Let sit at least 1 hour.
  • To serve, drain eggs, quarter, and sprinkle with sesame seeds if desired.
  • Do Ahead: Eggs can be marinated 2 days ahead. Cover and chill.
