Tripas, also known as Machitos, in Mexican cuisine are the small intestines of farm animals that have been cleaned, boiled and grilled. Tripas are used as filling for tacos, then dressed with condiments such as cilantro, chopped onions, and chile sauce. Posted in response to a recipe request. Courtesy of BigOven

1 lb tripe (beef or pork, very well cleaned and rinsed)
1 large onion, peeled and minced
1/4 teaspoon kosher salt, to taste
2 tablespoons olive oil
1/2 cup salsa (either medium or hot, to your own taste)
4 large corn tortillas, cut in half
1 cup cabbage, finely shredded
1/4 cup radish, finely sliced
1 cup cilantro, for garnish

Steps:

  • Chop tripe into 3/8" dice and drop it into boiling water and simmer for 20 - 30 minutes while you assemble and prep the other ingredients.
  • When the tripe is quite tender, drain it and allow it to dry a bit on some paper towels.
  • Heat one tablespoon of oil in a frying pan then add the tripe, allowing it to brown a bit then turning down the heat a bit and let it continue cooking until it starts to get crispy.
  • Reduce the heat to low and keep warm.
  • In another pan, saute the onions in a tablespoon of oil until they are softened and starting to brown.
  • Add half the salsa and the crispy tripe.
  • Adjust the seasoning with salt and additional salsa as needed.
  • Turn each 1/2 tortilla into a cone shape and spoon in some of the meat-onion mixture.
  • Top with some cabbage, radish slices, and cilantro.
  • Serve hot.

Si eres mexicano sabes que lo primero que se te viene a la mente al escuchar eso son unos deliciosos tacos de pastor, bistec, suadero... en fin, no terminaría de nombrarlos. Hace unos días probé unos tacos que nunca me había animado a probar porque no sabía si me gustarían y para mi sorpresa ¡estaban riquísimos!Les hablo de unos deliciosos tacos de tripa de res que en esta ocasión les enseñaré a preparar con RecetasGratis para que los puedan disfrutar en casa. El proceso para saber cómo hacer tacos de tripa estilo DF es un poco tardado pero vale la pena la espera para disfrutar de este delicioso manjar mexicano acompañado de una deliciosa salsa taquera, y cilantro y cebolla picados.

1 kilogramo de Tripa de res
250 gramos de Tortilla de maíz
1 taza de Cebolla picada
1 taza de Cilantro picado
2 dientes de Ajo
5 hojas de Laurel
1 cucharada postre de Sal

Steps:

  • El primer paso que tenemos que hacer es reunir los ingredientes necesarios para degustar y prepara la receta para tacos de tripa de res muy mexicanos.
  • Lavamos perfectamente la tripa de res por dentro y por fuera. No escatimes tiempo en este paso pues es muy importante que esta carne se encuentre lo más limpia posible.
  • En una olla agregamos agua y colocamos la carne con un poco de sal, cebolla, laurel y ajo, y dejamos hervir hasta que la carne esté perfectamente cocida, unos 90-120 minutos aproximadamente.
  • Una vez hervida la tripa la escurrimos y partimos en trozos no muy pequeños. A continuación, en una cacerola agregamos la manteca y cuando esté derretida ponemos la carne a freír y esperamos otros 15 minutos. Esto depende de qué punto prefieras comer la carne de los tacos de tripa de res, si ligeramente frita o muy frita.
  • Finalmente calentamos unas tortillas de maíz y preparamos los tacos de tripa de res tradicional acompañado con una rica salsa roja taquera, cebolla y cilantro finamente picados. ¡Buen provecho!
