Sometimes it can be a pain to eat healthy food. Whether because it's too much work or it just doesn't taste delicious. This is why I love sheet pan meals. They're simple, quick, healthy and tasty!

Number Of Ingredients 7

Ingredients

1 Package al fresco Sweet Apple Chicken Dinner Sausage, sliced
4 cups of Chopped fresh vegetables (Zucchini and Yellow Squash were used)
1 chopped yellow onion
3-4 cloves of garlic, finely chopped
2 tbsp. cooking oil
Black pepper to taste
Other seasoning to taste (Lemon Pepper and Smoke Paprika were used)

Steps:

Preheat oven to 425F.
Place dinner sausage, all vegetables and garlic on a large baking sheet pan.
Drizzle cooking oil and sprinkle black pepper and other seasonings over sausage and vegetables.
Mix everything with hands until well combined.
Bake for 20 minutes on middle rack. Flip halfway.
Serve and Enjoy!

Ingredients

2 tablespoons olive oil
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 medium orange sweet potatoes, peeled, cut into 1-inch pieces (about 4 cups)
2 medium unpeeled tart red apples, quartered and cut into 1-inch pieces
1 medium onion, cut into 1-inch pieces
1 package (12 oz) fully cooked smoked chicken and apple sausages, cut diagonally into 1-inch pieces

Steps:

Heat oven to 425°F. Spray 18x13x1-inch pan with cooking spray.
In large bowl, mix olive oil, thyme, rosemary, garlic powder, salt and pepper until well blended. Add sweet potatoes, apples, onion and sausages; toss to coat. Pour mixture in pan.
Bake 15 minutes; stir. Bake 8 to 12 minutes or until potatoes are tender when poked with fork and sausages are browned on edges.
