Puerto Rican Mofongo Recipe - Tablespoon.com image

Provided by TABLESPOON.COM

Total Time 20 minutes

Prep Time 10 minutes

Yield 4

Number Of Ingredients 5

4 green plantains
1 lb of chicharrón (crunchy pork skin)
3 garlic cloves, mashed
4 teaspoons of olive oil
2 cups frying oil

Steps:

  • Peel the plantains, cut them into 1 1/2-inch slices, soak them in salty water for 15 minutes, drain them and dry them before putting them on the hot skillet with oil.
  • Fry them for about 12 minutes at medium-low heat or until they turn light brown. Make sure to turn them. Do not brown them too much, so they are easy to mash. Stick a fork in them to check if they are done.
  • Remove them and mash them on a mortar. Add some mashed garlic and pieces of chicharrón.
  • Once you have mashed all the plantains, mold them into the shape of half sphere using your hands or a container. Serve hot with chicken broth or your favorite meat.

Yield Serves 6 to 8

Number Of Ingredients 17

2 tablespoons vegetable oil
1 onion, sliced
3 garlic cloves, crushed
1 pound pork shoulder, sliced thinly
1 chicken breast, deboned and sliced thinly
1/2 pound shrimp, peeled
2 tablespoons soy sauce
2 cups chicken broth
1 cup cabbage, shredded
1 cup green beans, julienned
2 carrots, julienned
3/4 cup dried black or shiitake mushrooms (optional)
1 package (1 pound) pancit canton (Chinese wheat noodles)
1/2 teaspoon freshly ground black pepper
Patis (Filipino fish sauce), to taste (optional)
4 green onions, sliced
1 lemon or kalamansi, cut into wedges

Steps:

  • If using mushrooms, soak them in warm water for 30 minutes, then cut into strips, discarding the tough stems. Set aside. Heat oil over medium-high heat in wok or large skillet. Saute garlic and onions until tender. Add pork, chicken and shrimp, and cook until browned. Add soy sauce, stirring to flavor. Add chicken broth and bring to boil. Add cabbage, green beans, carrots and mushrooms. Cook until vegetables are tender, yet crisp, 5-8 minutes. Add noodles, mixing gently to prevent them from breaking. BLACKOUT CAKE RECIPE - NYT COOKING
This absurdly rich chocolate cake came to The Times in a 1991 article by Molly O’Neill about Ebinger’s, the legendary chain of Brooklyn bakeries that closed its doors in 1972 after 74 years in business. Their wildly popular blackout cake, a three layer devil’s food cake filled with dark chocolate pudding, slathered with chocolate frosting and covered with chocolate cake crumbs, had a cult-like following in its day. This recipe isn’t authentic (the Ebinger family never shared the original recipe with the public), but Ms. O’Neill claims in her book, “The New York Cookbook: From Pelham Bay to Park Avenue, Firehouses to Four-Star Restaurants,” that this version got the thumbs-up from “a panel of twelve Ebingerites.” That’s enough for us.

  • Assemble the cake. Use a sharp knife to slice each cake into two disks to form four layers. Set one layer aside. Place one layer on a cake round or plate. Generously swath the layer with filling. Add the second layer and repeat. Add the third layer. Quickly apply a layer of frosting to the top and the sides of the cake and refrigerate for 10 minutes. Meanwhile, crumble the remaining cake layer. Apply a second layer of frosting to the cake, press cake crumbs into the top and sides of the cake, and serve within 24 hours. Store in a cool place.
