If you love Chinese food, then this is Hong Kong-style sweet and sour chicken is definitely the recipe for you. Master this dish with the use of a wok pan!

Number Of Ingredients 15

60ml (4 tbsp) tomato sauce
45ml (3 tbsp) white vinegar
60ml (4 tbsp) sugar
150ml (¼ pt) chicken stock
10ml (2 tsp) corn flour
600g (1½lbs) chicken breasts, sliced into strips
2 eggs, whisked
90g (3oz) cornflour
Salt and pepper, for seasoning
Oil, for frying
30ml (2 tbsp) vegetable oil
½ pineapple, peeled, stalk removed and cut into bite-sized pieces
1 large onion, peeled and cut into bite-sized pieces
1 red pepper, washed, peeled and cut into bite-sized pieces
1 green pepper, washed, peeled and cut into bite-sized pieces

Steps:

  • First make the sweet and sour sauce by combining the tomato sauce, vinegar, sugar, chicken stock and corn flour in a small saucepan over a low heat. When all the ingredients have come together to form a smooth sauce, remove from the heat and set aside.
  • Heat the oil in the wok on a high heat.
  • Dip the chicken pieces in the egg then dredge in the cornflour.
  • Fry the battered chicken pieces for 4-5 minutes or until crisp and light brown. Remove the meat from the wok and drain. You might need to do this in batches.
  • Heat 30ml (2 tbsp) vegetable oil in a clean wok, then fry the pineapple, onion and peppers for 3 minutes.
  • Add the chicken and sauce, stir and let the mixture bubble until it’s thickened.
  • Serve immediately with steamed rice.

Try this quick and easy recipe for homemade sweet and sour pork.

Number Of Ingredients 11

3 tbsp roasted peanuts
ground black pepper (or ground white pepper)
1 tsp crushed dried chillies
2 pork loin steaks, fat removed
2 tbsp groundnut oil
125g/4oz canned pineapple, in natural juice, juice reserved
3 tbsp freshly squeezed lime juice
light soy sauce
splash of Shaoxing rice wine or dry sherry (optional)
steamed rice
choi sum (Chinese cabbage), or spinach, steamed

Steps:

  • For the pork, place the roasted peanuts, a few pinches of ground pepper and the dried chillies into a food processor and pulse until coarsely ground. Transfer to a shallow bowl and set aside.
  • Place the pork steaks in between two sheets of cling film and, using a meat mallet or rolling pin, bash the pork steaks until halved in thickness. Roll the steaks in the soya bean mixture until well-coated, then pat lightly to secure the mixture to the meat, shaking off any excess.
  • Heat a wok until smoking and add the groundnut oil, then add the pork steaks and cook for 2-3 minutes on both sides, or until golden-brown and cooked through. Remove the steaks from the wok transfer to a warm plate to rest.
  • For the sweet and sour sauce, place all of the sauce ingredients into a food processor and blend to a smooth paste.
  • Pour the sweet and sour sauce into the wok used to cook the pork and leave to simmer for 1-2 minutes, or until the sauce has reduced to a thick consistency. Season, to taste, with light soy sauce, rice wine and ground white pepper.
  • To serve, pour the sauce over the pork and serve with rice and choi sum.

  • For the sweet & sour sauce, place brown sugar, tomato ketchup, soy sauce, vinegar, pineapple juice and Chinese five spice in a saucepan over medium-high heat. Simmer for a few minutes until sugar dissolves. In a small bowl, combine cornflour with 2 tablespoons of water. Add the cornflour mixture to the sauce and simmer for a further 2 minutes to thicken. Remove from heat and set aside. ​ In a large bowl toss chicken with soy sauce, garlic and pepper until well combined. ​ Place flour in a large bowl. Add the chicken and toss until each piece is lightly coated with flour. ​ Pour about a 3 cm (1 inch) depth of oil into a large non-stick frying pan over high heat. When the oil is hot (a piece of chicken should start sizzling immediately when placed into the oil) cook chicken in batches for 2-3 minutes each side or until golden brown and cooked through. Drain on paper towel. Heat the remaining 1 tablespoon of oil in a clean frying pan or wok. Add the onion and stir-fry until just starting to turn golden. Add the tomato and stir-fry for another 30 seconds. Add the chicken and the sweet and sour sauce and stir-fry until well combined. Toss through the spring onions. Remove from heat and serve.
