This is the stuffing that my mom makes very Thanksgiving, and it's absolutely divine. The holiday just isn't the same without the taste of this dish. The day after it's cooked, it's wonderful cold, too! This recipe makes enough for a 12-pound turkey, about three quarts of stuffing.

12 cups bread, cubes (Mom makes her own sometimes)
1 cup unsalted butter
3/4 cup minced onion
1 1/2 cups chopped celery, stalks and leaves
1 cup chopped mushroom (optional)
2 teaspoons salt
1 teaspoon pepper
1 tablespoon ground sage
no-salt-added chicken broth (optional)

Steps:

  • In a large, heavy skillet over medium heat melt the butter, then sauté the onion and celery (and mushroom, if using) until the onion is soft, stirring occasionally.
  • Stir in the salt, pepper, and sage and cook for an additional 3 minutes.
  • Place the bread cubes into a large, deep bowl.
  • Pour 1/4 cup of the butter/celery mixture over the cubes and toss well, then repeat steps until all of the butter mixture is used.
  • Toss the cubes thoroughly to coat.
  • (Regarding the optional chicken broth: for dry stuffing, add little or no liquid; for moist stuffing mix in lightly with fork just enough chicken broth to moisten dry crumbs.) Let cool and use as stuffing for the turkey.
  • We've made this stuffing in the crockpot, as well, adding the chicken broth for moistness.

  • Note: regardling the amount of salt - yes, the amount listed above is correct and is what is listed in the original Betty Crocker recipe. When the butter mixture is first added to the bread, if you taste it at this point it might seem salty (because it is sitting right on the surface of the bread) but remember that the liquid and butter soaks into the bread and redistributes evenly. Also, this recipe, being from the 1950s, is specifically for cooking *inside* the turkey, which a lot of people no longer do, and again the salt will redistribute from the juices in the meat. If you use a crockpot for cooking your stuffing, I'd recommend reducing the amount of salt.
  • Note #2: again, regarding the salt. You're going to have to decide for yourself about the salt. Having eaten this recipe for every year of my life I know it tastes wonderful as it's written. But that's just me.

Roast turkey is a favourite Christmas tradition and this turkey has the stuffing roasted inside for extra flavour! It absorbs all the lovely turkey juices, creating a flavourful accompaniment to the Christmas roast. Use our roast calculator to find exact turkey cooking times. For this recipe, you will need a piece of muslin cloth large enough to cover the turkey.

4.5-5.5kg/10-12lb whole turkey, with giblets
1 onion, halved
1 carrot
2 celery sticks
2 sprigs of fresh parsley
2 sprigs of fresh thyme
175g/6oz butter
flaked sea salt and freshly ground black pepper
85g/3oz butter
175g/6oz onions, finely chopped
225g/8oz fresh white breadcrumbs
2½ tbsp chopped mixed fresh herbs (parsley, chives, thyme or sage)
1.2 litres/2 pints stock (see above, or chicken stock)
1 tbsp softened butter
1-2 tbsp plain flour

Steps:

  • For the stock, put the giblets, onion, carrot, celery and herbs in a saucepan and season. Cover with about 2 litres/3½ pints cold water and bring to the boil, then reduce the heat and simmer for 2 hours, or until you have a flavoursome stock. Strain and set aside for making the gravy. (The stock can be made a day or two in advance; cover and store in the fridge, then skim any fat from the top.)
  • Preheat the oven to 200C/180C Fan/Gas 6. For the stuffing, melt the butter in a saucepan over a medium heat. When it is foaming, add the chopped onions and season. Cover with greaseproof paper and a lid, turn the heat to low and cook for 8-10 minutes, or until completely softened. Set aside to cool.
  • Put the cooled onions in a mixing bowl. Mix in the breadcrumbs and mixed herbs and season to taste. Weigh the stuffing to assist with calculating the cooking time.
  • Season the turkey cavity at both ends. Stuff some of the stuffing into the main cavity, but be careful not to pack it in - there must be enough space between the stuffing and breastbone to fit the handle of a wooden spoon. Stuff the smaller cavity at the neck end, again leaving a little space. Put the turkey into a large roasting tray. Melt the 175g/6oz butter, then soak the muslin in the butter and wrap it over the turkey.
  • To calculate the cooking time, add the weight of the turkey and stuffing together. Roast for 15 minutes, then turn the oven down to 180C/160C Fan/Gas 4 and roast for 15 minutes per 450g/1lb of the total weight. Baste with the juices every 30 minutes; it is important to do this quickly so as to not let the turkey cool down, as this could alter the cooking time. Remove the muslin 15 minutes before the end of roasting and baste again.
  • To test if the turkey is cooked, insert a small fruit or vegetable knife into the thicktest part of the meat, between the leg and breast; the juices that run should be clear, with no sign of pink; if there is any pink, return the turkey to the oven for another 15-20 minutes, or until cooked through. Tranfer the turkey to a carving dish. Cover it with parchment paper, then place a clean tea-towel over it to keep it nice and snug. Leave it to rest for at least 30 minutes, or up to 1½ hours.
  • Meanwhile, for the gravy, skim off the fat from the roasting tray with a spoon. Place the tray on a medium heat and deglaze it by pouring in the stock. Using a whisk, scrape free all the caramelised bits on the bottom of the tray. Bring the mixture to the boil, then carefully pour it into a saucepan through a sieve and season.
  • To thicken the gravy, mix together the butter and flour, then whisk it into the gravy. Bring the mixture to a simmer, then remove from the heat.
  • Carve the turkey and serve on warm plates with the stuffing and hot gravy.

    6. Turn the turkey around and drop a few small pieces of stuffing into the larger cavity along with your clementine halves and a few sprigs of rosemary. Place your roughly chopped veg in the bottom of a roasting pan and lay your turkey on top. Cover the turkey with tin foil then put it in the hot oven and immediately turn the temperature down to 180°C/350°F/gas 4. Cook for about 35 to 40 minutes per kilo. The 5kg bird in this recipe will take about 3 to 3½ hours.
    7. Check on your turkey every 20 minutes or so and keep it from drying out by basting it with the lovely juices from the bottom of the pan. After 2½ hours, remove the foil so the skin gets golden and crispy.
    8. When the time is up, take your turkey out of the oven and stick a small sharp knife into the fattest part of the thigh. If the juices run clear and the meat pulls apart easily, it’s ready. If not, pop the turkey back in the oven to cook for a bit longer then check again. When you're confident it's cooked, rest the turkey for at least 1 hour, preferably 2 hours for bigger birds. Meanwhile you can get your veg and gravy ready.

    1. Dad and I had a really interesting conversation about smaller families not wanting whole turkeys for their dinner. So we had a scout around the supermarkets and developed a really delicious and impressive recipe for this. It’s dramatic and stretches the meat a fairly long way. The case of pastry and minced mushrooms keeps the breast moist and delicious and is a little forgiving so the meat holds its juices. You could assemble it a day before and just leave it in the fridge ready to over deliver on Christmas day.
    2. Preheat the oven to 180°C/350°F/gas 4. Place the turkey breast upside-down on a board. Gently slice into the natural join of the breast muscle to open it out and make a sort of pocket. Season well and drizzle with olive oil. Sprinkle over half the thyme leaves, then spread over an even layer of cranberry jam, pushing it into all the nooks and crannies. Fold it back into shape to seal the mixture inside – swiss roll-stylie – and push a few cocktail sticks into the seam to keep it together. Transfer the turkey to a roasting tray, season the outside with the remaining thyme leaves, a good pinch of salt and pepper and a drizzle of olive oil. Rub it all over, cover in tin foil and roast in the hot oven for 60 to 70 minutes, or until just cooked through – using a thermometer, you want it to be 72°C at the thickest point.
    3. Meanwhile, soak the porcini in a dish of just-boiled water. After 5 minutes, stir with a fork so any bits of grit sink to the bottom. Add the bacon to a large frying pan with a splash of oil on a medium heat and fry for 5 to 10 minutes, or until beautifully golden and super crispy. Strip in the leaves from 2 rosemary sprigs for the last 30 seconds or so. Remove everything from the pan with a slotted spoon and set aside, leaving the bacon fat behind. Add the fresh mushrooms to the pan with a pinch of salt and pepper. Drain and chop the porcini, saving the water, then stir into the pan. Add a splash of the water, avoiding the grit, then cook for around 10 to 15 minutes, or until the pan starts to sizzle again and the mushrooms are golden, soft and sticky with caramelly edges.
    4. To make the gravy, cut the thigh off the turkey leg and slash into it slightly. Throw the leg and thigh into a pot along with the carrot, leek and onion. Stir in the flour, add a good pinch of salt and pepper and 2 litres of boiling water. Add a heaped tablespoon of cranberry jam, the balsamic vinegar and remaining rosemary sprig. Bring back to the boil, then reduce to a simmer for around 2 hours, or until thick. Strain it through a sieve and reheat before serving.
    5. When the mushroom pan is dry, add a knob of butter and toss to coat. Tip the mushrooms into the food processor and whiz until you get a good mixture of smooth and chunky. Leave to cool. Once the turkey breast and stuffing have cooled, you can get on with assembling the wellington.
    6. Dust a clean surface with flour, then roll out each packet of puff pastry to the size of a shoe box (one will be the base, one the lid – roll the lid ever so slightly bigger). Line a large roasting tray with greaseproof paper, dust with flour, then add the smaller piece of pastry. Spread half of the mushroom stuffing onto the middle of the base to cover an area the same size as your turkey breast. Remove the cocktail sticks, then place the turkey breast on top and spread the remaining stuffing over the top packing it all in and smoothing it out so that the whole breast is covered. Sprinkle with the crispy bacon and rosemary, then brush the edges of the pastry with beaten egg. Lay the second sheet of pastry over the top, gently mold it round the shape of the breast, pushing all the air out and seal together. Trim the edges to around 4cm, then pull, twist, tuck and pinch in the pastry (like in the picture).
    7. Brush the whole thing with beaten egg then all the hard work’s done. Leave it uncovered in the fridge overnight until you’re ready to cook. On Christmas day, cook at 180°/350°F/gas 4 for 50 to 60 minutes, or until risen, puffy and beautifully golden and the turkey is piping hot throughout. Remove from the oven and leave to cool for around 10 minutes before carving. Serve carved into 2.5cm with the gravy and all the usual. Christmas in a mouthful.
