1 garlic clove (minced)
1 medium onion (chopped)
2 tablespoons snipped parsley
2 (32 ounce) cans whole tomatoes (cut up)
2 (8 ounce) cans tomato sauce
1 teaspoon sugar
1/2 teaspoon basil
1 lb ricotta cheese
1/4 lb grated mozzarella cheese
1 tablespoon snipped parsley
3 teaspoons parmesan cheese (grated)
2 teaspoons sugar
1 egg, slightly beaten
additional parmesan cheese, grated

Steps:

  • Sauce: Heat olive oil in a large saucepan.
  • Saute onion and garlic in oil until onion is transparent.
  • Add cut up tomatoes, tomato sauce, sugar, and basil.
  • Simmer about 20 minutes.
  • Filling: Mix ricotta, mozzarella, parmesan, parsley, sugar, and egg together.
  • Assemble: Fill uncooked manicotti shells with cheese mixture.
  • Place in a lightly greased 9 x 13-inch baking dish; cover completely with sauce.
  • Cover and bake at 400°F for about 1 1/4 hours or until pasta is tender.
  • Uncover and sprinkle with some Parmesan cheese and bake 15 minutes longer.
  • Let sit about 15 minutes before serving.

We borrowed some inspiration from our Million Dollar Lasagna and came up with these slow-cooker stuffed shells that are filled with million-dollar ingredients like cream cheese, cottage cheese and an Italian meat sauce.

1 jar (25.5 oz) Muir Glen™ organic tomato basil pasta sauce
1 container (16 oz) cottage cheese
1 1/2 cups shredded mozzarella cheese (6 oz)
4 oz (from 8-oz package) cream cheese, softened
1/4 cup shredded Parmesan cheese (1 oz)
1 egg, slightly beaten
1/4 teaspoon crushed red pepper flakes
1 lb lean (at least 80%) ground beef
3/4 cup water
1/2 cup heavy whipping cream
30 uncooked jumbo pasta shells

Steps:

  • Spray 5-quart slow cooker with cooking spray. Set aside 3/4 cup of the pasta sauce.
  • In medium bowl, mix cottage cheese, 1 cup of the mozzarella cheese, the cream cheese, Parmesan cheese, egg and pepper flakes.
  • Heat 12-inch skillet over medium heat; add beef. Cook 5 to 7 minutes, stirring occasionally, until browned; drain. Add remaining pasta sauce (about 2 1/2 cups), 1/2 cup of the water and the whipping cream to the beef. Pour into slow cooker.
  • Fill each uncooked pasta shell with rounded tablespoonful of cheese mixture. Place in slow cooker. Mix reserved 3/4 cup pasta sauce with remaining 1/4 cup water; spoon over shells. Cover; cook on high heat setting 1 1/2 to 2 hours or until pasta is tender. Sprinkle remaining 1/2 cup mozzarella cheese over shells. Cover; let stand 15 minutes.

  • Preheat oven to 350 degrees. Boil pasta shells 25 minutes. Drain and let cool. In a mixing bowl add the garlic, parsley, a little over half the container of ricotta and a little over half the bag of mozzarella. Mix well. In a large rectangle baking dish add a layer of sauce. Then begin to fill the shells and line them up. Do not over stuff or shells will fall apart when serving. Make sure the shell can close. Top with sauce so it completely covers the shells then sprinkle the rest of the mozzarella on top. Bake for 30 minutes. Remove from oven and let stand for 10 minutes before serving.
