OLIVE-STUFFED CELERY RECIPE: HOW TO MAKE IT
My grandmother taught both me and my mom this appetizer recipe for stuffed celery. We always serve it at Christmas and Thanksgiving. The stuffing is so yummy that even if you don't normally care for the ingredients on their own, you'll love the end result. —Stacy Powell, Santa Fe, Texas

- Finely chop the pickles and olives; set aside. In a small bowl, beat the cream cheese, Miracle Whip, juices and salt until blended. Stir in the pickles, olives and pecans., Pipe or stuff filling into celery sticks. Store in the refrigerator.

Hi, Here is a great recipe for Stuffed Mushrooms that is easy to make and is usually goes over well. You can make these a day ahead and bake before serving.

Steps:
- Wash and dry the mushrooms.
- Remove and chop the stems.
- Melt butter in a 12 inch skillet over medium high heat. Add the mushroom stems, celery and onion.
- Saute until the onion is translucent, stirring occasionally.
- Stir in the bread crumbs, Worcestershire Sauce and seasonings.
- Mound the stuffing onto the mushroom caps.
- Arrange caps on a greased baking sheet. Bake for 5-7 minutes, or until thoroughly heated.
- If you like mushrooms, you will like this!

This classic hors d'oeuvres recipe first appeared in The Times in a February 1981 column by Craig Claiborne on the then-popular topic of no-salt cooking. Mushrooms, he said, are “the one basic ingredient best suited to a no-salt cookery,” noting a “depth of flavor” and “a meat-like consistency.” We may have relaxed our beliefs regarding our salt consumption, but this more than 30-year old recipe remains a reader favorite. It's also blessedly easy to make. After removing the stems from the mushrooms, you simply sauté the caps with a little butter, lemon juice and black pepper (we won't tell if you add a little salt). Make a simple stuffing of chopped mushroom stems, shallots, garlic, celery, thyme, egg, bread crumbs and shredded Gouda. Stuff the mushroom caps, drizzle with butter and bake for about 15 minutes. See? The 1980s weren't so bad.
