3 thin (1/2 inch) rib-eye steaks
2 tablespoons PW Steak Rub, recipe follows
Butter, for frying 
2 tablespoons coriander seeds
2 tablespoons fennel seeds
1 tablespoon mustard seeds 
1/4 cup sugar 
2 tablespoons garlic powder 
2 tablespoons onion powder 
2 tablespoons kosher salt 
2 tablespoons ground black pepper 
1 teaspoon red pepper flakes 

Steps:

  • Season the steaks with the PW Steak Rub.
  • Heat a cast-iron skillet over high heat. Add some butter and let it sizzle and start to brown. Fry the steaks for 1 minute per side. Serve.
  • Heat a skillet over medium heat until hot. Toast the coriander, fennel and mustard seeds until aromatic, 2 to 3 minutes. Grind in a spice grinder until finely ground, then add to a bowl. Add the sugar, garlic powder, onion powder, salt, black pepper and red pepper flakes and mix to combine.

Harissa is a spicy ground chili paste that originated in Africa. We added it to spice up this steak and potato breakfast skillet.

1 (1-lbs.) pkg. beef chuck boneless petite tender steaks
0.25 c. of harissa paste
1 tbsp. of Gustare Vita garlic-flavored olive oil
1 (1-lbs.) pkg. baby red potatoes
0.5 tsp. of Hy-Vee salt
0.5 tsp. of Hy-Vee ground black pepper
0.5 c. of red onion
0.5 c. of red bell pepper
0.5 c. of Hy-Vee triple Cheddar shredded cheese
4 Hy-Vee large eggs
1 avocado
0 Fresh cilantro

Steps:

  • 1.

    Preheat oven to 375 degrees. Add steak and harissa to a large resealable plastic bag; shaking to coat. Set aside and allow to marinate 20 minutes at room temperature.

  • 2.

    Meanwhile, heat olive oil in a 10-inch cast iron skillet over medium-high heat. Add potatoes to skillet and season with salt and pepper. Cook potatoes 15 to 20 minutes, stirring occasionally, or until potatoes are crispy.

  • 3.

    Add steak to skillet. Saute 2 to 3 minutes. Stir in onions and peppers; sprinkle with cheese. Create 4 wells for the eggs and crack eggs directly into skillet. Place skillet into oven and bake 5 to 8 minutes or until egg whites are opaque and yolks have thickened. Remove from oven. Serve topped with avocado and cilantro, if desired.
