28 oz Canned crushed tomatoes (1 can)
0.333 cup(s) Canned tomato paste
2 Tbsp Balsamic vinegar
3 tsp Dried oregano
1 tsp Table salt
0.25 tsp Red pepper flakes or to taste
2 pound(s) Uncooked 93% lean ground turkey
0.5 cup(s) Whole wheat Panko breadcrumbs
2 Tbsp Dried basil
1 tsp Fennel seeds crushed
0.5 tsp Black pepper

Steps:

  • Stir together tomatoes, tomato paste, vinegar, 2 teaspoons oregano, 1/2 teaspoon salt, and pepper flakes in 5- or 6-quart slow cooker.
  • Mix together turkey, panko, basil, fennel seeds, remaining 1 teaspoon oregano, and remaining 1/2 teaspoon salt, and black pepper in large bowl until combined well but not overmixed. With damp hands, shape turkey mixture into 24 meatballs. Add to slow cooker. Cover and cook until meatballs are cooked through and flavors are blended, 6 to 7 hours on Low.
  • Per serving: 3 meatballs and 1/3 cup sauce

1 lb ground turkey
1/3 cup dry breadcrumbs
1 egg
1 garlic clove, minced
1 teaspoon grated fresh ginger
1 tablespoon soy sauce
1/2 teaspoon red pepper flakes
1 (20 ounce) can pineapple chunks, do not drain
2 tablespoons orange juice
2 tablespoons honey
1 tablespoon cornstarch
1 tablespoon soy sauce
1/4 teaspoon red pepper flakes
1 large red bell pepper, cut into chunks
2 -3 cups hot cooked rice

Steps:

  • Combine the ingredients for the meatballs in a large bowl. Shape turkey mixture into 1 inch balls.
  • Heat a small amount of oil in a skillet. Add the meatballs & fry on all sides until no longer pink in the center, around 5 minutes. Place the meatballs on a paper towel lined plate to drain excess oil.
  • Drain the juice from the pineapple into a bowl. Add enough water to the juice to make 1 cup of liquid.
  • Whisk the pineapple juice, orange juice, honey, soy sauce, cornstarch, & pepper flakes together.
  • Pour the sauce into the skillet & cook over medium heat until it thickens, stir frequently.
  • Once thickened, add in the pineapple, peppers, & meatballs. Continue to cook until hot. Serve over rice.
