1/2 c. finely chopped red onion
1/4 c. honey
1/4 c. cayenne pepper sauce
1 tbsp. cider vinegar
salt
Freshly ground black pepper
1 cut-up chicken (8 pieces)

Steps:

  • Prepare outdoor grill for covered direct grilling on medium. In a large bowl, stir onion, honey, cayenne pepper sauce, and cider vinegar. Set aside. Sprinkle 1/2 teaspoon each salt and freshly ground black pepper all over chicken. Place on grill, skin side down. Cover and cook 15 to 20 minutes or until juices run clear when chicken is pierced with tip of knife, turning over once. (Smaller pieces will cook more quickly.) Immediately after chicken is cooked, transfer to bowl with sauce. Toss until evenly coated. Serve.

1 bottle (18 ounces) barbecue sauce
1 can (20 ounces) pineapple chunks, undrained
1 medium green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
Hot cooked rice

Steps:

  • Place four chicken breasts in a 5-qt. slow cooker. Combine the barbecue sauce, pineapple, green pepper, onion and garlic; pour half over the chicken. Top with remaining chicken and sauce. , Cover and cook on low until a thermometer reads 165°, about 5 hours. Thicken sauce if desired. Serve the chicken and sauce with rice.
