Spicy Tuna Poke Bowls made with chunks of fresh tuna, avocado, cucumbers, spicy mayo, scallions cut on the bias served on a bed of steamed rice – YES please!!

1/2 pound sushi grade tuna (cut into 1/2-inch cubes)
1/4 cup sliced scallions
2 tablespoons reduced sodium soy sauce or gluten-free tamari
1 teaspoon sesame oil
1/2 teaspoon sriracha
2 tablespoons light mayonnaise
2 teaspoons sriracha sauce
1 cup cooked short grain brown rice or sushi white rice
1 cup cucumbers ((from 2 Persian) peeled and diced 1/2-inch cubes)
1/2 medium Hass avocado ((3 ounces) sliced)
2 scallions (sliced for garnish)
1 teaspoon black sesame seeds
Reduced sodium soy or gluten-free tamari (for serving (optional))
sriracha (for serving (optional))

Steps:

  • In a small bowl combine the mayonnaise and sriracha, thin with a little water to drizzle.
  • In a medium bowl, combine tuna with scallions, soy sauce, sesame oil and sriracha. Gently toss to combine and set aside while you prepare the bowls.
  • In 2 bowls, layer 1/2 the rice, 1/2 the tuna, avocado, cucumber and scallions.
  • Drizzle with spicy mayo and sesame seeds and serve with extra soy sauce on the side, if desired.

Quiz time: this traditional Hawaiian dish has become very popular in recent years. What is it? Well, it’s poke, a dish made with raw fish – usually tuna -, marinated with soy sauce and spices, and joined by veggies on a bed of rice. If you enjoy your food on the hot side, then you’ll just love this variation! The chili quantity is nice, but it doesn’t overpower the contents of the bowl, thanks to the balancing power of the radishes.

Number Of Ingredients 16

3 red chilis es
2 baby carrots
2 radishes es
1 fresh coriander
1 garlic clove
½ avocado
7 ounces of sushi -grade red tuna
2 tablespoons of dark soy sauce
1 lemon
salt
2 tablespoons of rice vinegar
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
5 ounces of rice
seaweed

Steps:

  • Cook the rice according to the instructions on the package. Drain and set it aside to cool.
  • Thinly slice 1 red chili, baby carrots, radishes, and garlic. Chop the coriander and cube the avocado. Add everything in a large bowl.
  • Place the tuna on your working surface and cut it into chunks. Place it in a separate bowl, and add the dark soy sauce, lemon juice and rice vinegar. Season with salt, and add black and white sesame seeds. Mix everything.
  • Mix the fish with the veggies.
  • Place the rice in a bowl, and top it with the fish and veggie salad.
  • Serve with seaweed and 2 extra chilies on top.
