EASY FRIED SPINACH | ALLRECIPES
This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

Steps:
- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

- In a large skillet, heat the grapeseed oil until shimmering. Add the garlic and cook over high heat, stirring, for 30 seconds. Add the spinach all at once and toss until nearly wilted. Add the coconut milk and fish sauce and cook until the spinach is tender and the coconut milk has reduced, about 3 minutes. Top with fried onions and serve.

1. Heat a wok until it just starts smoking. Add the vegetable oil and, when hot, stir-fry the garlic and chilli until fragrant (10 to 20 seconds).
2. Add the spinach and stir-fry for 30 seconds, then deglaze the wok with shaoxing wine.
3. Add the sea salt and sugar and stir-fry for a further 1 to 2 minutes, until the spinach is tender but still bright green.
Serving suggestion: Add some steamed rice and serve alongside my chicken stir-fry (pictured) for a fantastic dinner for two.
