Number Of Ingredients 21

1 kg mutton or chicken
2 onions sliced
4 tomatoes chopped or ¾ tin tomato
Tomato puree
Few peppercorns
1 bay leaf
1 large black cardamom
2 small green cardamom
1 teaspoon whole jeeru (cumin)
1 stick cinnamon
1 Cup oil (more or less-depends on your preference)
1 TB ghee (Clarified butter)
Chilli powder
Coriander powder
Cumin powder
Chopped coriander
Chopped Mint
A good pinch of saffron
3 potatoes cut and colored with orange food color
3 Cup rice
Green chillies, garlic cloves,ginger(Grind this into a

Steps:

  • Heat oil +ghee in a large pot. Add the whole spices (Peppercorn,bayleaf,green and black cardamom and whole jeero). Allow to brown slightly then add the sliced onions. Fry till golden brown. Add meat,chopped mint and safron and cook till meat starts to change color on medium high 6 min. Add the grinded green masala paste. Mix. Add 3 tsp cumin pwd,5tsp coriander powder,1 tsp tumeric. Add chilli pwd and kashmiri powder to taste.Mix well Add tomatoes or 3/4 tin tomato with 1/2 TB tomato puree Mix well,pour in 1/2 c water if cooking chicken. Add in 2tsp garum masala. For meat add 1.5 c,close lid and cook till water has evaporated on medium to low heat. Cook lamb until cooked,adding more water if nedded. Pout in 4.5 c water,chopped coriander,salt and boil for 5 mins. Then add washed rice,food coloring if using,and potatoes, and steam on medium heat until rice is cooked through.
