Louisiana Spicy Chicken Po' Boys | Hy-Vee image

0.5 c. of Hy-Vee light salad dressing
0.25 c. of blue cheese crumbles
6 Smart Chicken skinless boneless chicken breast halves (about 3 pounds)
1 tsp. of Hy-Vee ground chili powder
0.5 tsp. of Hy-Vee granulated sugar
0.5 tsp. of Hy-Vee salt
0.5 tsp. of Hy-Vee garlic powder
0.5 tsp. of Hy-Vee ground cumin
1 tbsp. of Hy-Vee Select olive oil
6 (5 oz each) French Demi Rolls, split, hollowed-out
6 romaine lettuce leaves
6 Roma tomatoes, sliced

Steps:

  • 1. Combine salad dressing and blue cheese; cover and chill.
  • 2. Cut each chicken breast lengthwise into 4 strips. Combine chili powder, sugar, salt, garlic powder and cumin in a shallow dish. Rub spice mixture onto chicken pieces.
  • 3. Heat oil in a large nonstick skillet over medium-high heat.
  • 4. Cook chicken, half at a time, 6 to 8 minutes or until lightly blackened and no longer pink and internal temperature of chicken reaches 170 degrees, turning occasionally.
  • 5. Line the bottom half of each split roll with lettuce leaf. Top with chicken, tomato, blue cheese mixture and the top of the roll.

Vegetable oil for deep-frying
4 French rolls, split and hinged
4 tablespoons melted butter
1 teaspoon minced garlic
3 eggs, beaten
2 tablespoons Creole seasoning
¾ cup all-purpose flour
2 pounds jumbo shrimp, peeled and deveined
2 cups Kikkoman Panko Bread Crumbs
2 cups shredded lettuce
½ cup mayonnaise
1 tablespoon horseradish
1 teaspoon pickle relish
1 teaspoon minced garlic
½ teaspoon cayenne pepper
2 tablespoons Kikkoman Ponzu Lime

Steps:

  • Combine butter and garlic, spread on rolls and toast in the oven until brown. Heat oil in a 2 quart saucepan until 360 degrees. Mix creole seasoning and flour. Dredge shrimp in flour then egg; roll in panko. Fry shrimp in batches until golden brown. Spread remoulade sauce on all 4 rolls. Top with shrimp, followed by shredded lettuce.
  • Remoulade sauce: Mix mayo, horseradish, pickle relish, minced garlic, cayenne pepper, and ponzu in a bowl.
