SLOW-COOKER PEAR BUTTER RECIPE: HOW TO MAKE IT

- Place spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. In a 5- or 6-qt. slow cooker, toss remaining ingredients. Add spice bag, covering with pears., Cook, covered, on low 5-6 hours or until pears are tender. Remove spice bag., Puree pear mixture using an immersion blender. Or, cool slightly and puree mixture in a blender in batches; return to slow cooker., Cook, uncovered, on high 1-2 hours or until mixture is thickened to desired consistency, stirring occasionally. Store cooled pear butter in an airtight container in the refrigerator up to 1 week.
Freeze option: Freeze cooled pear butter in freezer containers up to 3 months. Liquids expand as they freeze, so leave extra room at the top of the freezer container. To use, thaw in refrigerator.

- Preheat oven to 350°. Toss pears with orange juice; place in a greased 13-in. x 9-in. baking dish. Combine the sugar, cinnamon, allspice and ginger; sprinkle over pears., For topping, in a small bowl, combine the flour, oats, brown sugar and baking powder; cut in butter until crumbly. Sprinkle over pears., Bake until topping is golden brown and fruit is tender, 35-40 minutes. Serve warm. If desired, garnish with mint.

- Preheat the oven to 200°C/400°F/gas 6.
- Put a 21cm-diameter frying pan with an ovenproof handle on a hob over a medium heat. Add the sugar and heat to a lovely caramel colour, stirring constantly.
- Chop the butter into cubes, then add to the pan with the ginger and cinnamon, and stir to combine.
- Peel and core the pears, cut into wedges, then place in the caramel and spoon over the mixture. Turn the heat down and cook for 5 to 10 minutes, or until the pears are just tender and cooked but retain their shape.
- Remove from the heat and cool slightly, then arrange the pears prettily in the pan.
- Roll out the pastry to about 5mm thick and cut a disc slightly bigger than your pan (about 24cm).
- Carefully place the pastry disc on top of the pears and caramel, then carefully tuck it snugly around the outside of the pears and down into the sides of the pan.
- Bake the pie for 30 to 40 minutes, or until the pastry is golden brown and puffed up.
- Remove from the oven and leave for 10 minutes. Run a knife around the edge, place a large plate over the top and carefully turn the tart onto the plate. Serve with double cream.

- For the crust: Put the flour and salt in a large bowl. Work in the butter and shortening with a pastry cutter until it resembles tiny pebbles. Add the egg. Stir in the water and vinegar until just combined, adding a little more flour if the dough is too wet or a little more water if it’s too crumbly. Divide the dough in half; flatten into disks. Wrap in plastic wrap and chill for 30 minutes. For the filling: Melt 4 tablespoons butter in a large nonstick skillet over medium heat. Add the apples and lemon juice, then sprinkle in the sugars and cook, tossing, until the apples start softening, 5 minutes. Increase the heat to get the juices bubbling; cook until glazed, about 1 minute. Sprinkle in the flour, cinnamon and salt. Simmer just until the filling thickens, about 1 minute. Remove to a bowl and let cool. Roll out the dough on a floured surface into a 13-inch round. Place in a 9-inch pie plate. Add the apple filling and dot with the remaining 2 tablespoons butter. Roll out the remaining disk of dough on a floured surface into a 13-inch round. Lay the dough over the filling and fold the overhanging dough under itself; crimp the edges and cut a few small slits in the top crust. Chill for 30 minutes. Place a baking sheet on the bottom oven rack; preheat to 450 ̊. Combine the coarse sugar, cinnamon and chile powder. Brush the pie with cream; sprinkle with the spiced sugar. Put the pie on the hot baking sheet and reduce the oven temperature to 375 ̊. Bake until the crust is golden and the filling is bubbly, 1 hour. (If the crust is browning too quickly, cover loosely with foil.) Transfer to a rack and let cool.

- 1. Peel, core and dice pears. (Be sure to chop the pears relatively small, as they'll remain close to that size in the finished jam.) 2. Toss the pears in lemon juice and sugar, cover and refrigerate for overnight (12 to 24 hours). This step is important, and at an absolute minimum, they need 4 hours, preferably more. 3. Prepare a water bath canner (if canning, skip for a freezer jam). 4. Place pear mixture into a heavy-bottomed saucepan and bring to a boil on high. The mixture will foam, so be sure your pan is big enough to handle foaming to avoid overflows. 5. Stir the mixture occasionally, watching for overflows, and cook for about 10-15 minutes. If pear pieces are too large, crush slightly with a potato masher (optional). 6. Cook until the pear jam reaches gel stage, using an instant-read thermometer or testing a small amount on a plate placed in the freezer. (Gel stage is 220 degrees F at sea level and a bit below that at higher elevations. The finished temperature drops by 1 degree for every 500 feet above sea level. I'm at 1000 feet, so my jams finish at 218 F.) 7. Once the jam reaches gel stage, immediately remove it from the heat and pack it into jars leaving 1/4 inch headspace, sealing with 2 part canning lids. 8. Store the pear jam in the refrigerator for immediate use, or process in a water bath canner for 5 minutes. Turn off the canner and allow the jars to sit an additional 5 minutes before removing them to a towel on the counter. Check for seals after a few hours, and store any unsealed jars in the refrigerator. Canned pear jam should last 18 months or more at room temperature if properly sealed (refrigerate after opening) Refrigerated jam should last at least 2-3 weeks.
