Number Of Ingredients 11

1 lb ground beef
1 15 oz can diced tomatoes
8 oz tomato sauce
1/2 tsp salt
1/4 tsp pepper
1 tsp Italian seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
3/4 cup parmesan cheese
3 bell peppers (any color)
1/2 cup mozzarella cheese

Steps:

  • To a skillet add the ground beef cook through, drain the grease add diced tomatoes, tomato sauce, seasonings, and 1/2 cup parmesan cheese stir to melt the cheese
  • Slice the bell peppers in half lengthwise and remove the seeds and the insides of the peppers.
  • Place the bell peppers on a sheet pan then evenly scoop the ground beef mixture in each of the bell peppers sprinkle the rest of the parmesan cheese and mozzarella cheese on top. Bake for 25-35 minutes. Enjoy

2 Tbsp. olive oil
1 Tbsp. unsalted butter
4 large or 6 medium potatoes, peeled and cut into ½” cubes
1 onion, diced
1 red bell pepper, diced
2 tsp. fresh parsley, chopped
3 garlic cloves, minced
Salt and pepper, to taste
1/4 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oil and butter in a large nonstick skillet over medium heat. Add potatoes, toss to coat with oil, and place a lid on the pan. Allow the potatoes to cook covered for 10 minutes.
  • Remove the lid and increase the heat to medium high. Add onion and bell pepper. Cook for 15 minutes, stirring occasionally, until the potatoes and vegetables turn golden brown.
  • Add the parsley and garlic; cook for 2 minutes. Season with salt and pepper. Sprinkle with Parmesan and serve immediately.
  • Enjoy!
