These snickerdoodle cookies are so delicious, and they have the best texture. They are so fast to put together too! I actually got it from an old recipe that my Great Grandma had clipped out of a newspaper. Grandma always knows best!

1 cup butter, softened
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Mix softened butter, 1 1/2 cups sugar, 1tps of vanilla extract and eggs thoroughly in a large bowl.
  • Combine flour, cream of tartar, baking soda and salt in a separate bowl.
  • Blend dry ingredients into butter mixture.
  • Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
  • Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  • Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
  • Coat by gently rolling balls of dough in the sugar mixture.
  • Place on chilled ungreased cookie sheet, and bake 10 minutes.
  • Remove from pan immediately.

1/2 cup salted butter, softened
1/2 cup vegetable shortening
1 1/2 cups plus 2 tablespoons sugar
2 medium eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon fine salt
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the butter, shortening, 1 1/2 cups sugar and the eggs and mix thoroughly with an electric mixer on medium speed until creamy and well combined, 1 to 2 minutes. Sift together the flour, cream of tartar, baking soda and salt, and stir into the shortening mixture.
  • In a small bowl, stir together the remaining 2 tablespoons sugar with the cinnamon.
  • Shape the dough into 1 1/2-inch balls (1 tablespoon per ball), and roll each ball in the cinnamon-sugar. Arrange the dough balls 2 inches apart on ungreased cookie sheets. Bake two sheets at a time until the edges of the cookies are set but the centers are still soft, 8 to 10 minutes, rotating the sheets halfway through. Transfer the cookies to wire racks for cooling. Repeat with the remaining dough balls. Store in an airtight container.

Add ground cinnamon and mix on low speed until distributed throughout the dough. Scoop dough by the tablespoon and roll into balls. Set aside. Spread parchment paper over a work surface or on a baking sheet. Place 6 ounces of finely chopped chocolate in a microwave-safe bowl. Microwave in 30 second intervals, stirring after each interval, until chocolate is melted. Check the temperature of the chocolate; it should be 110 degrees F. If it is too cool, heat it for 5 second intervals until the proper temperature is reached. Stir in remaining 2 ounces of roughly chopped chocolate until it has melted and the chocolate cools to 87 degrees F. Dunk each ball of cookie dough into melted chocolate, spooning melted chocolate over the surface until coated. Use a fork to scoop each ball out, gently shaking off the excess chocolate back into the bowl, then place truffle onto the parchment paper. While chocolate is still wet, sprinkle a tiny bit of cinnamon on the top of the truffle. Repeat with remaining dough balls. If chocolate starts to get too cool (starts hardening on the side of the bowl), return it to the microwave for 5 seconds and stir before continuing. Allow truffles to set up at room temperature for 5-10 minutes, until chocolate has hardened.
