SMOKED VENISON JERKY | MEATEATER COOK

Smoked Venison Jerky | MeatEater Cook image

This savory jerky recipe includes garlic and black pepper to complement the wood-smoked flavors. I prefer to use tender roasts from the hindquarter (like eye of round or top sirloin), but any large hunk of red meat will do. These pieces should be sliced across the grain and marinated for two days to...

Provided by Danielle Prewett

Yield 2 1/2 - 3 pounds

Number Of Ingredients 12

2 1/2 – 3 lb. venison roast
1 cup soy sauce
1/2 tsp. Prague powder #1
3 tbsp. brown sugar
1 tbsp. black pepper
2 cloves of garlic, smashed or minced
2 tbsp. red wine vinegar
1/2 tbsp. dried rosemary leaves
1/2 cup water

Steps:

  • Slice the meat against the grain between 1/8-inch and 1/4-inch thick. This is easier to do when the meat is chilled in the freezer for an hour or hasn’t fully defrosted. Place all the sliced meat in a large, resealable bag.
  • If you have a mortar and pestle, smash the garlic cloves until you reach a rough paste. Mix the garlic with the water, soy sauce, pink curing salt (Prague powder #1), red wine vinegar, black pepper, and sugar until well blended.
  • Pour the liquids into the bag with the meat and mix to coat each piece on both sides. Marinate in the fridge for at least 12 hours and up to two days, tossing and mixing the bag periodically.
  • Prepare a smoker according to manufacturer’s settings using your choice of wood. Pre-heat to 160 degrees.
  • Remove the meat from the marinade and squeeze off excess liquid. Lay each piece of meat on a metal grid or pizza screen. If you have the time and space, let the pieces air-dry for a few hours in the refrigerator so it will absorb more smoke.
  • Smoke the venison for 3 to 4 hours. It should be fully dry but still pliable. If your smoker cannot get below 180 degrees, you can opt to smoke for 1 hour to impart flavor, then switch to a traditional dehydrator set at 145 to finish. This will prevent the jerky from becoming bitter or too brittle.
  • Once completely cool, store in an airtight bag for 1 to 2 months. The jerky can also be refrigerated for 3 to 6 months or frozen for a year.
  • Note: Pink curing salt (also known as Prague Powder #1) is a blend of sodium chloride (table salt) and sodium nitrite. It is used to prevent the growth of botulism bacteria, impart the savory flavors of cured meat, and give it a pink color when smoked. Although it isn’t required, I recommend it if you’re storing the meat for more than a few weeks. Do not use more than a teaspoon per 5 pounds of meat.

VENISON HOT DOGS | MEATEATER COOK

Venison Hot Dogs | MeatEater Cook image

You’d be hard pressed to find a more iconic food for watching fireworks and celebrating Independence Day than a hot dog fresh off the barbecue. Toppings selection is very personal, but I’m fond of the Chicago style ingredients—“dragged through the garden,” as they say in the Windy City. The...

Provided by Danielle Prewett

Yield 12+ Hot Dogs

Number Of Ingredients 26

2 1/2 lb. wild hog meat, roughly chopped
12 oz. pork fatback, roughly chopped
2 tbsp. kosher salt
3 cloves of garlic, minced
1 1/2 tbsp. smoked paprika
1 1/2 tbsp. mustard powder
1 tsp. sugar
1/4 tsp. black pepper
1/2 tsp. ground coriander
1/4 cup ice
Fresh, natural casing (sheep for thinner-diameter sausages, pig for thicker)
Serving
12 hot dog buns
Poppyseeds
Yellow mustard
Sweet pickle relish
Diced sweet onion
Kosher dill pickle
Sliced tomatoes
Pickled sport peppers
Celery salt

Steps:

  • Before grinding, ensure the meat and fat are very cold. Send the meat through the grinder using a large plate, and then a second time using a fine die. Pause in between grinding to chill the meat if needed to avoid smearing. After the second round of grinding, cool the meat in the freezer.
  • Transfer the meat to a food processor or mixer and add the spices and ice. Pulse or mix until thoroughly emulsified. The mixture should turn into a ball of tacky paste.
  • If the casings are dried, soak them in freshwater to soften for about 30 minutes before stuffing. While the intestines soak, set up your sausage stuffer. Try lubricating the feeding tube and inner cannister by sprinkling it with cold water so the meat won’t stick. Thread the casing onto the stuffing tube and tie a knot at the end.
  • Evenly stuff the sausage into the casing. As you go, use a needle to prick a small hole in any air bubbles. Once all the sausage is inside the casing, begin to pinch off links in roughly 6-inch increments: starting with the first one, twisting, and then moving 6 inches down the line. Continue pinching and twisting off every other link so as not to undo the previous link.
  • To cook, you can gently poach the links in simmering water, grill over high heat, or smoke the hot dogs at 225 degrees until they’re cooked through to an internal temperature of 155 degrees. If you plan to grill or smoke, the texture will improve if allowed to rest for a day or two in the refrigerator.
  • Before serving, steam the buns with water, baste the top sides with butter or oil and sprinkle with poppyseeds to coat. Wrap the bread inside parchment paper and bake for a few minutes until soft, or set inside of a microwave for 30-60 seconds.
  • Serve the hot dogs inside of the poppyseed buns layered with all of the suggested toppings.

  • In a large bowl, combine peas and baking soda and add water to cover by at least 4". Cover and let soak for at least 6 hours and up to overnight. Once fully hydrated, rinse beans and drain completely. In a large pot over medium-high heat, heat 2 tablespoons oil. Add onions, garlic, celery, serrano (if using), jalapeño, and salt, and cook, stirring occasionally, until lightly golden, about 10 minutes.  Push vegetables to the edge and make a empty well in the middle of the pan. Add remaining 1 tablespoon oil in the well, then add in all the spices and stir spices until fragrant, about 1 minute. Add in pork, peas, and broth. Bring to a simmer, then reduce heat to medium-low.  Partially cover pot with a lid, and let simmer until peas are tender, about 35 minutes. To concentrate broth, remove lid and continue cooking until liquid has reduced to desired consistency, 10 to 20 minutes more. Serve with greens, cornbread, and hot sauce, if desired.
