COCONUT FAIRY CAKES | BBC GOOD FOOD

This recipe is special because of my secret ingredients, coconut it gives it a nice fluffy taste and makes it super delicious!

Yield Makes Serves 12 people

Steps:

  • Preheat oven to 190C Gas mark 5
  • Weigh out 4oz of butter or margarine softened slightly, weigh out 4oz of caster sugar as well
  • Cream the butter and the caster sugar together until light and fluffy
  • Crack 2 eggs and measure out 4oz of self raising flour and mix in with vanilla extract and 2 handfuls of coconut
  • Cook for 12-15 minutes in the oven the ice with any icing of your choice
  • You will now have your coconut fairy cakes ready to serve!

This simple cake is one of my favorite recipes, because I love coconut. The recipe has been mostly eyeing the ingredients so I tried to make the recipe. This has been in my family for years.

Number Of Ingredients 6

1?½ cups shredded coconut
1 cup white sugar
2 cups all-purpose flour
2 eggs, room temperature
½ cup milk, or more as needed
¼ cup simple syrup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Whisk coconut and sugar together in a bowl. Sift in flour and whisk to combine. Make a well in the middle of the mixture and set aside.
  • Whisk eggs together in a small bowl and pour into the well in the flour mixture. Add enough milk to reach a slightly thickened, but runny, texture. Pour batter into the prepared pan.
  • Bake in the preheated oven until golden brown on top and a toothpick inserted into the center comes out clean, 20 to 25 minutes.
  • Remove from the oven and let cool for 20 minutes. Pour simple syrup over cake before serving.

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , Preheat oven to 325°. In another large bowl, beat sugar, butter and oil until well blended. Fold a fourth of the egg whites into batter, then fold in remaining whites., Transfer to 3 greased and floured 9-in. round baking pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners’ sugar and extract; beat until smooth. , Place 1 cake layer on a serving plate; spread with 1/2 cup frosting and sprinkle with 1/3 cup coconut. Repeat. Top with remaining cake layer. Spread remaining frosting over top and sides of cake; sprinkle with remaining coconut. Refrigerate for 2 hours before cutting. Store in the refrigerator.

6 INCH SOUTHERN COCONUT CAKE | JUST A PINCH RECIPES
I have a recipe that has been well received for a while now for Southern coconut custard cake. The only problem with this cake is that it is 10inches, 4 layers and weighs a bit over 12 pounds. It really isn't what I'd call a casual cake. I wanted to make this cake for a couples birthday because they like coconut cake, but again the cake is too freaking big for just two people to eat realistically. So I got playing with some of the ratios and made a recipe that works great for a small cake, perfect for 2-4 people to share.

  • Assembly: 1- Once cakes are completely cooled, level off any doming in the cakes with a cake leveler or a serrated bread knife. 2- Divide each cake into two layers. You will have 4 cake layers total. 3- Place first layer of cake down on a cake dish and coat the cake layer liberally with simple syrup. 4- Spread about 1/2 cup of coconut custard on the layer evenly. 5- Place next layer of cake on top of that layer and repeat this process for the remaining layers, omitting a layer of custard on the very top of the cake. 6- Frost as desired with cream cheese frosting and garnish. I like to garnish the sides of the cake with toasted coconut and top it with the untoasted sweetened flakes.
