1 pound ground beef
1/2 pound bulk spicy pork sausage
2 pounds cubed Velveeta
2 cans (10 ounces each) diced tomatoes and green chiles
Tortilla chip scoops, red pepper and cucumber sticks

Steps:

In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Transfer to a 3- or 4-qt. slow cooker. Stir in cheese and tomatoes., Cover and cook on low for 4-5 hours or until cheese is melted, stirring occasionally. Serve with tortilla chips, red pepper and cucumber sticks.

Ingredients

2 (5 ounce) skinless, boneless chicken breast halves
1 (15.25 ounce) can corn, undrained
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
1 (1 ounce) package ranch dressing mix
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 (8 ounce) package light cream cheese, cubed

Steps:

Place chicken at the bottom of a slow cooker; pour corn, black beans, and diced tomatoes on top. Top with ranch dressing mix, chili powder, cumin, and onion powder. Stir together. Place cream cheese on top.
Cover and cook on Low until chicken is no longer pink in the center and juices run clear, 6 to 8 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Shred chicken with 2 forks; serve.

Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic and cook until softened. Add chili powder, cumin, and cayenne until fragrant, 1 minute. Add ground beef and cook until browned. Transfer beef mixture to slow cooker along with tomatoes, kidney beans and beef broth, and season generously with salt and pepper. Cover and cook on high for 4 to 6 hours or low for 8 to 10 hours. When ready, stir in dry pasta and cook on high for 15 minutes more. When pasta is tender stir in cheeses until evenly distributed and melted. Garnish with scallions and serve.
