Orange-Almond Slices Recipe | EatingWell image

These twice-baked almond- and orange-flavored cookies are wonderful on cookie trays or served with fresh fruit or ice cream. Dip one edge of the crunchy slices into melted chocolate to dress them up for a special celebration.

¾ cup sugar
½ cup butter, softened
2 eggs
5?½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
? cup slivered almonds, toasted and chopped (see Tips)
1 tablespoon finely shredded orange peel

Steps:

  • Preheat oven to 350 degrees F. In large bowl, combine sugar, butter and eggs. Beat with electric mixer on low to medium speed until combined. Beat in 2 cups of the flour, the baking powder, and salt. Stir in remaining flour, the almonds, and orange peel.
  • Divide dough in half. Shape each half into 10-inch roll. Place on ungreased cookie sheet; flatten slightly until about 3 inches wide. Bake about 20 minutes or until toothpick inserted near center comes out clean. Cool on cookie sheet for 30 minutes.
  • Preheat oven to 350 degrees F. Cut each roll into 1/2-inch slices. Place, cut sides down, on ungreased cookie sheet. Bake for 8 minutes. Turn slices over and bake for 7 to 9 minutes more or until golden and crisp. Transfer to wire rack; cool.

This cookie is very chewy on the inside and crisp on the outside, BUT the entire outside is coated in sliced almonds for a fantastic look and is absolutely delicious. It is well worth the effort.

Number Of Ingredients 6

2 lbs almond paste
1 cup all-purpose flour
8 egg whites
2 cups white sugar
2 cups confectioners' sugar
2 cups sliced almonds

Steps:

  • Preheat oven to 350F (175 degrees C).
  • Grease cookie sheets.
  • In a large bowl, use your hands to mix together the almond paste, flour, egg whites, white sugar and confectioners' sugar until well blended.
  • The mixture will be very sticky.
  • Place the sliced almonds into a small bowl.
  • Scoop out rounded teaspoonfuls of the dough and drop them into the almonds.
  • Roll until completely coated.
  • Place 2 inches apart onto the prepared cookie sheets.
  • Bake for 15 to 20 minutes in the preheated oven, until golden brown.
  • Cool on cookie sheets for a few minutes before removing to a wire rack to cool completely.
