3 bananas
2 cups old fashioned oats
1/4 cup creamy peanut butter
1/4 cup unsweetened cocoa powder
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 dash cinnamon (optional)

Steps:

  • Preheat oven to 350°F
  • Mash bananas in a large bowl, then stir in remaining ingredients.
  • Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Sprinkle with cinnamon if desired.
  • Bake 10-12 minutes.
  • Freezing Directions:Cool completely, then place cookies in a freezer bag. Seal, label, and freeze.

2 can(s) reduced fat pillsbury crescent rolls (off-brand works well too!)
1/2 cup(s) sugar free maple syrup
1 tablespoon(s) light butter
3 tablespoon(s) cinnamon
1/4 cup(s) stevia/splenda (or sugar substitute of choice)

Steps:

  • Preheat the oven to 350 degrees. Spray 12 cup muffin tin with non-stick spray, (I suggest using non-stick muffin tin to prevent sticking!)
  • Open up both cans of crescent dough, and cut each triangle into 3 equal-sized pieces. Roll each piece of dough into 3 equal-sized small balls, totaling 24 balls per pack of crescent rolls. (Note: balls should be smaller than golf balls, but big enough that about 4 balls will fit into each muffin tin).
  • Combine the stevia/splenda (or whatever sugar substitute you choose) with 2 tbs of cinnamon in a small bowl. Toss the dough balls in the cinnamon-‘sugar’ mix until the balls are well coated.
  • Next, melt the butter in microwave-safe bowl for about 30 seconds, (or until melted). Add the syrup and 1 tbs cinnamon to the melted butter, stir, and set aside.
  • Place four balls into each individual muffin tin, and pour the butter-syrup mixture over each muffin tin, until the dough balls are almost covered in the syrup mixture, (if there isn’t enough to cover each muffin tin, I just added a bit more syrup to each tin).
  • Bake for 15- 20 minutes, or until a caramelized crust forms on the top of each little monkey bread. Remove from the oven, and let cool for about 15 minutes. Use a knife to remove the edges and serve on a pretty plate… Preferably while still warm!

  • Preheat oven to 350 degrees. Coat a Bundt pan with nonstick cooking spray. In a microwave safe bowl, toss together chopped apples, 2 tablespoons sugar and 2 teaspoons cinnamon. Cook for 2 minutes to soften. In the meantime, in a pan, melt butter, brown sugar, water and vanilla. Bring to a boil, turn heat to low and cook for 2 minutes. Stir often. Set aside. In a large bowl, blend 3 tablespoons granulated sugar and 2 teaspoons cinnamon. Quarter each biscuit from 1 package and roll each piece in about half the sugar/cinnamon mixture. Place biscuit pieces layered evenly in Bundt pan. Spoon ½ of cooked apples evenly over the biscuits. Spoon ½ of cooked sauce over the apples and biscuit pieces. Quarter each biscuit from the 2nd package and roll each piece in remaining sugar/cinnamon mixture. Place these remaining biscuit pieces layered evenly in Bundt pan. Add remaining cooked apples evenly over top of biscuits. Spoon remaining ½ of cooked sauce evenly over apples and biscuit pieces. Bake for 25 minutes. Remove from oven. Let sit for about 5 minutes. While still hot, carefully loosen sides and middle of pan. Invert onto a serving plate. Serve warm. Slice into 16 slices and let everyone pull their slice apart to eat. Makes 16 servings (It’s so decadent tasting 1/16 of the recipe is very satisfying)
