OMG!!! I can not tell you how great this meal is. It is your meat and vegetables all in one. I was able to prepare, cook and eat this meal with approximately 45 minutes. And clean up is a breeze. My hubby was so impressed.

1 pound(s) large shrimp (26/30)
2 cup(s) broccoli florets (small one)
2 cup(s) julliene carrots
3-4 slice(s) onion
- salt and pepper to taste
- drizzle oilve oil
- drizzle sesame oil
- drizzle soy sauce (or teriyaki)
- canola oil

Steps:

  • Preheat oven to 400 degrees. Lay out 4 pieces of aluminum foil. Brush a light coat of canola oil on the rectangle piece.
  • Then take and divide the broccoli, carrots, shrimp and a slice of onion. **please note if you want, you can use baby carrots, if you do use baby carrots, I would microwave steam them for a couple of minutes.
  • Drizzle each pouch with olive oil, soy sauce, and sesame oil. Then salt and pepper to taste.
  • Then fold over the fold edges to seal them. Place on cookie sheet and bake for 15 minutes.

cherry tomatoes
lettuce leaves
½ cup carrots
½ cup celery
½ cup mayonnaise
½ cup red bell peppers
¼ cup onions
¼ cup radishes
1 packet (1 ounce) Hidden Valley® Original Ranch Salad® Dressing & Seasoning Mix
1 pound shrimp
½ cup plain yogurt
2 cups rice
2 tablespoons celery leaves
6 pita pocket breads

Steps:

  • In large bowl, whisk together yogurt, mayonnaise and dressing mix until smooth. Stir in carrots, bell pepper, celery, onion, radishes, celery leaves and rice. Gently fold in shrimp. Cover and refrigerate until ready to serve.
  • Just before serving, cut pocket breads in half. Place lettuce inside pocket breads and stuff each pocket with ½ cup of the shrimp mixture. Tuck 2 or 3 cherry tomato slices into each sandwich.

  • Preheat grill over high heat, or preheat oven to 425°. Cut 4 sheets of foil about 12 inches long. Divide shrimp, garlic, sausage, corn, and potatoes evenly over the foil sheets. Drizzle with oil, then add Old Bay seasoning and season to taste with salt and pepper. Toss gently to combine. Top each mixture with parsley, lemon and a tablespoon of butter each. Fold foil packets crosswise over the shrimp boil mixture to completely cover the food. Roll top and bottom edges to seal them closed. Place foil packets on grill and cook until just cooked through, about 15 to 20 minutes (or transfer to oven and bake for 20 minutes).

  • Bring a large pot of salted water to a boil. Add the pasta and cook about 2 minutes less than the time for al dente on the package. Drain. Meanwhile, preheat the oven to 350 °. Heat 1 tablespoon each butter and olive oil in a large skillet over medium-high heat. Add half the shrimp, season with salt and cook until they’re nicely browned and opaque, 1 1/2 to 2 minutes, turning once. Remove them to a plate and set aside. Repeat with more butter and oil, the remaining shrimp and some salt. Reduce the heat to medium. Add the remaining 1 tablespoon each butter and olive oil to the skillet. Throw in the garlic and stir to prevent it from burning, then stir in the wine. Let the liquid reduce a couple of minutes. Stir the tomatoes with their juices, 3/4 teaspoon salt, black pepper to taste and the red pepper flakes into the sauce. Simmer for about 7 minutes. Grab 2 large sheets of heavy-duty foil and overlap them by about 8 inches on a rimmed baking sheet. Pour the drained pasta onto the foil. Spoon the tomato sauce and saute´ed shrimp on top, making sure you include all the juices. Tightly wrap the foil into a packet, rolling up the sides so it won’t leak. Bake for 15 minutes.  Open the foil pack right before serving, drizzle with the warm heavy cream and sprinkle with the basil, parsley and cheese. Be sure to get some of the sauce with each serving. It’s heavenly!
