I made these for the first time for my Nursing School class. They loved them. Wanted to know where to buy them! When I told them I made them, they all clamored for the recipe.

1 quart(s) half and half
16 - eggs
1 pound(s) breakfast sausage
1 pound(s) bacon
1 - loaf italian bread - cut in 1/2 inch cubes
3 tablespoon(s) butter (divided)
2 cup(s) shredded cheddar cheese
- salt and pepper to taste
- nonstick cooking spray

Steps:

  • Preheat oven to 350 degrees F. Spray 24 muffin cups liberally with nonstick cooking spray. Brown and crumble sausage. Set aside to cool. Brown and crumble bacon. Set aside to cool. Cut bread into 1/2 inch cubes. Set aside. Melt 2 Tablespoons of butter. Set aside.
  • With a whisk, mix 12 eggs and 2/3 cup of half and half. Melt 1 Tablespoon butter in large skillet. Scramble eggs until just done. Set aside to cool.
  • Whisk together remaining half and half and 4 eggs. Pour mixture over bread and make sure all the bread gets soaked. Let set for a few minutes until all the liquid is soaked up. Mix in melted butter, cooled sausage and bacon, and cheese. Gently mix in scrambled eggs. Try not to break them up too much.
  • Spoon mixture into muffin cups and bake at 350 for about 30 minutes. Until tops are browned and custard is set (a knife inserted into center of muffin should come out clean.) Serve warm or at room temperature.
  • These freeze extremely well and make a great quick breakfast!

4 large eggs
2 cups milk
¾ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
2 tablespoons unsalted butter, melted
6 slices stale bread
½ cup chocolate chips
1 tablespoon chia seeds
¼ cup brown sugar, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 12-cup muffin tin or line with paper liners.
  • Whisk eggs in a large bowl just until mixed. Add milk, white sugar, cinnamon, and salt; mix well. Mix in melted butter.
  • Break bread into small pieces into the bowl and mix until well combined and bread is wet. Add chocolate chips and chia seeds; mix well.
  • Divide mixture evenly between the prepared muffin cups and sprinkle with brown sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
