SALTINE CRACKER BRICKLE RECIPE - NYT COOKING

Saltine Cracker Brickle Recipe - NYT Cooking image

In December 2009, The New York Times asked readers to send photos and recipes of their favorite holiday cookies. About 100 people answered the call, and this one, from Kelly Mahoney in Boulder, Col. was one of the 35 recipes chosen for online publication. It's got just five ingredients - Saltines, sugar, butter, vanilla and chocolate chips - and it comes together in about 20 minutes, so you can satisfy those salty-sweet cravings in a snap. It also works with salted matzo.

Provided by The New York Times

Total Time 20 minutes

Yield About 2 pounds

Number Of Ingredients 5

48 saltine crackers
1 cup granulated sugar
1/2 pound unsalted butter
1 teaspoon vanilla
3 cups semisweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Line a sheet pan or large cookie sheet with sides with heavy-duty aluminum foil. Arrange the crackers side by side in a single layer on the foil. In a small saucepan, melt the sugar and butter, stirring constantly until they bubble, about 2 to 3 minutes. Remove from heat and quickly stir in the vanilla. Pour evenly over the crackers and, using a spatula, spread to cover evenly.
  • Bake immediately. After 7 minutes, remove the pan from the oven and sprinkle the chocolate chips evenly over the crackers. Return to the top rack of the oven and bake for 2 minutes more. Spread the chocolate evenly over the crackers with a clean spatula. Cool for 20 to 30 minutes before transferring the tray to the freezer. The next day, peel off the foil and break the brickle into pieces. Keep frozen or refrigerated.

SALTINE CRACKER TOFFEE RECIPE - TABLESPOON.COM

Saltine Cracker Toffee Recipe - Tablespoon.com image

Known elsewhere as “Christmas crack,” saltine cracker toffee is the addictive holiday treat that’s notorious for being a sweet-and-salty lover’s dream come true. Buttery saltine crackers are topped with nutty-sweet toffee and then spread thick with rich, melty, milk chocolate (what’s not to love?). We’re not exaggerating when we say they’re the ultimate test in portion control. Don’t say we didn’t warn you.

Provided by Girl Who Ate Everything

Total Time 1 hours 25 minutes

Prep Time 20 minutes

Yield 40

Number Of Ingredients 5

40 salted saltine crackers, or enough to line your pan
1 cup unsalted butter
1 cup packed brown sugar
2 cups milk chocolate or semisweet chocolate chips
3/4 cup chopped pecans, if desired

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan or large rimmed cookie sheet with foil. Spray foil with cooking spray. Place saltine crackers in single layer in pan.
  • In 1 1/2-quart saucepan, heat butter and brown sugar to boiling over medium heat. Continue boiling for 3 minutes. Immediately pour over saltines; spread to cover crackers completely.
  • Bake 5 to 6 minutes or until crackers look all bubbly.
  • Remove from oven; sprinkle chocolate chips over top. Let stand a minute or two to melt; spread evenly. Or, in microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until they can be stirred smooth; spread over crackers. Top with pecans.
  • Cool completely on cooling rack, about 40 minutes. Refrigerate 15 to 20 minutes or until chocolate is firm. Break into pieces.

  • 1. Preheat the oven to 400F. Line a baking sheet with parchment paper or aluminum foil. Arrange the saltine crackers in a single layer on the baking sheet. 2. In a small saucepan, bring the butter and brown sugar to a boil; boil until it turns a deep caramel color, about 3 minutes. Immediately pour the mixture over the saltines and spread with a silicone spatula to cover the crackers completely. 3. Bake the crackers until the caramel is bubbly and the crackers look like they are floating, 5 to 6 minutes. Remove from oven and straighten any crackers that have gotten out of line. 4. Sprinkle with the white chocolate chips and let sit a couple of minutes to melt. (If the pan isn't hot enough, you can place it back in the oven for about a minute to encourage melting.) Spread the melted white chocolate into an even layer with a spatula. 5. In a small bowl, whisk together the granulated sugar and cinnamon. Sprinkle evenly on top of the white chocolate while it's still wet. 6. Cool completely. You can place the pan in the refrigerator for about 10 minutes to help the white chocolate set. Once the white chocolate is set, break the toffee into pieces to serve.
