Bacon Wrapped Salmon Bites

Number Of Ingredients 3

2 skinless wild caught salmon fillets, about 12 ounces total
10 very thin slices of nitrate-free bacon, cut in half
2 Tbsps fresh chopped parsley, to garnish

Steps:

  • Slice your salmon fillets into, 1-1.5 inch bite sized cubes as shown, then roll each cube with half a slice of bacon.
  • Heat a large non-stick skillet over medium heat, and carefully fry the bacon wrapped salmon cubes until nicely browned on all sides, about 8-10 minutes, flipping them constantly.
  • Alternatively, place them onto a lined baking tray into your 350 degree f. preheated oven for 13-15 minutes.
  • Garnish with fresh chopped parsley and enjoy immediately.

With school in full swing and the holidays fast approaching, Fall is a busy time for everyone in our family. Even so, I never want to skimp on family dinners, and this simple and satisfying recipe has proven a dependable winner time and time again. Salmon can get a little bit, shall we say...repetitive...but an easy marinade and a bit of bacon makes for a killer weeknight feast.

Number Of Ingredients 8

1-2lbs Salmon cut into 1.5" cubes
1 12oz pack Maple Sugar Bacon Strips
2 teaspoons ginger, minced or grated
4 cloves garlic, minced
½ teaspoon red pepper
? cup soy sauce
? cup honey
1 tablespoon olive oil

Steps:

  • Whisk together ginger, garlic, red pepper, soy sauce, honey and olive oil.
  • Cut salmon into 1.5-2" cubes and marinate in soy sauce mixture for 30 minutes to 1 hour.
  • Beginning with a pack of Maple Sugar Bacon, cut strips in half.
  • Wrap 1/2 a strip around each piece of salmon and secure with a toothpick (or GrillPinz).
  • Space at least 1" apart on a foil lined sheet.
  • Bake at 400°F until salmon is cooked through and bacon is crisped to your liking, about 15 minutes.

  • Make salmon: Preheat oven to 400°. Place lemon slices on bottom of 9"-x-13" baking dish and place salmon on top. Season salmon all over with 2 teaspoons McCormick Himalayan Pink Salt, Black Pepper and Garlic All-Purpose Seasoning.   In a medium bowl, whisk together mustard, oil, lemon juice, maple syrup, and remaining 1/2 teaspoon McCormick Himalayan Pink Salt, Black Pepper and Garlic All-Purpose Seasoning. Pour sauce over salmon. Roast salmon until cooked through and it flakes easily with a fork, 20 to 25 minutes. Turn oven to broil and broil until golden, if desired, about 3 minutes. Meanwhile, make candied bacon: In a small bowl, whisk maple syrup with brown sugar and ¼ teaspoon of McCormick Himalayan Pink Salt, Black Pepper and Garlic All-Purpose Seasoning.  In a large skillet over medium heat, cook bacon until lightly golden on both sides, about 4 minutes per side. Drain bacon fat. Return skillet to medium heat and pour maple syrup mixture into pan. Add bacon and cook, turning slices frequently until liquid is almost absorbed and bacon is glazed, 3 to 4 minutes.  Using tongs, carefully transfer bacon to a work surface to cool completely. Crumble bacon and sprinkle with chives over cooked salmon before serving.
