Sliced Cucumber Salad Recipe | MyRecipes image

The English cucumber is ideal for this salad because it is seedless. Pickling or salad cucumbers may also be used.

2 cups thinly sliced peeled English cucumber
1 tablespoon minced fresh chives
2 teaspoons minced fresh cilantro
2 tablespoons rice vinegar
1 teaspoon sugar

? teaspoon crushed red pepper

Steps:

  • Combine cucumber, chives, and cilantro in a medium bowl. Combine vinegar and remaining 3 ingredients in a small bowl, stirring until sugar dissolves. Pour vinegar mixture over cucumber mixture; stir gently.

2 medium cucumbers, thinly sliced
1/3 cup cider or white vinegar
1/3 cup water
2 tablespoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper
Chopped fresh dill weed or parsley, if desired

Steps:

  • Place cucumbers in small glass or plastic bowl.
  • In tightly covered container, shake remaining ingredients except dill weed. Pour over cucumbers. Cover and refrigerate at least 3 hours to blend flavors.
  • Drain cucumbers. Sprinkle with dill weed. Store covered in refrigerator.
