2 quarts water
3 fresh rosemary sprigs
1 tablespoon minced fresh gingerroot

Steps:

  • Combine all ingredients in a large glass carafe or pitcher. Cover and refrigerate 12-24 hours. Strain before serving.

Yield 8 servings (1 cup each).

Number Of Ingredients 8

2 cups water
2 fresh rosemary sprigs
1/2 cup sugar
1/2 cup honey
1-1/4 cups fresh lemon juice
6 cups cold water
Ice cubes
Additional lemon slices and fresh rosemary sprigs, optional

Steps:

  • In a small saucepan, bring 2 cups water to a boil; add rosemary sprigs. Reduce heat; simmer, covered, 10 minutes., Remove and discard rosemary. Stir in sugar and honey until dissolved. Transfer to a pitcher; refrigerate 15 minutes. , Add lemon juice; stir in cold water. Serve over ice. If desired, top with additional lemon slices and rosemary sprigs.

  • "Heat 2 tablespoons of the olive oil in a large, heavy-bottomed skillet over medium-high heat. Add the chicken breasts and cook, turning, until golden brown all over, about 7-10 minutes. Transfer them to a plate and set it aside. Add the remaining tablespoon of olive oil and the leeks to the skillet and saute for 3-4 minutes, until softened. Stir in the garlic and pancetta (if using) and cook for 2 - 3 minutes. Deglaze the pan with the white balsamic vinegar. Add the tomatoes, lemon zest, lemon juice, rosemary and sage (if using) and return the chicken breasts to the skillet. Season with salt and pepper to taste and then pour in the chicken broth. Reduce the heat to medium-low and cook, covered, for about 20 minutes or until the sauce is reduced by half and the chicken is fully cooked (temperature should be 165 degrees). If the pan gets dry during cooking, add a splash of broth or water as needed. Slice the chicken breasts and spoon the sauce on top; serve with lemon wedges along with the zuchinni salad. Note: These chicken breasts are great make-ahead meal and will keep in an airtight container in the refrigerator for up to 3 days. They are also freezer friendly."
