Steps:

  • Set the pressure cooker to saute. Place the onion into the pot and cook it until it's turning translucent. Add the ground beef into the pot and brown until it's no longer pink. Once the beef is browned, add the uncooked rigatoni to the pot. Pour the two jars of sauce over the pasta, making sure to cover the pasta with the sauce. Set the pressure cooker to cook on manual high pressure for 5 minutes. Do a quick pressure release. Add the ricotta cheese and stir well. Put the lid back onto the pressure cooker and let sit for 5 minutes. If you want to add shredded mozzarella to the dish, add it in now and stir to combine before serving. Alternatively, you can also just sprinkle some of the shredded cheese on top of the pasta when you're serving.

beef broth
heavy cream
Mozzarella cheese
red pepper flakes
rigatoni
sausage
tomato
tomato paste

Steps:

  • Place uncooked rigatoni in the bottom of the pressure cooker. Pour the beef broth over the pasta, making sure the liquid covers the pasta completely. Add sliced sausages in an even layer over pasta. Add crushed tomatoes, garlic, tomato paste, basil, and red pepper flakes. Do not stir!
  • Cover the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 3 minutes.
  • Using the Natural Release method, bring pressure to normal. Unlock and open the lid. Stir the pasta well.
  • Stir half-and-half into the pasta mixture. Season to taste with salt and black pepper. Transfer to serving plates. Sprinkle each plate with grated Mozzarella cheese. Serve hot.

  • Plug in the electric pressure cooker. Place the ground beef into the mixing bowl. Add the Italian bread crumbs, grated parmesan cheese, Italian seasoning, garlic powder, dried onion, parsley flakes, and 1 cup ricotta cheese to the bowl and combine thoroughly. Form meatballs about the size of a golf ball by hand and set aside on a plate. You should have approximately 18 nice size meatballs. Cover the bottom of the pot with a thin layer of olive oil. Place the meatballs into the pot. Place the rigatoni into the pot. Pour the two cans of tomato sauce into the pot. Fill one of the empty tomato sauce cans with water and pour that water into the pot. Be sure that all of the pasta is covered. Place the lid onto the pressure cooker and close to seal. Set the pressure cooker to cook for 8 minutes on manual high pressure. Once the cooking time has ended do a quick pressure release. Use a silicone cooking spoon to give a quick stir. It may look like you have a lot of sauce but once you stir it won’t. Add in the remaining cup of ricotta cheese and stir to combine. Serve immediately with salt, pepper and grated cheese if desired. Enjoy!
