2 tablespoons butter
1 cup Italian rice
Pinch saffron, optional
1/3 cup dry white wine
Salt and pepper
1 cup grated Parmesan, plus extra for garnish
5 large eggs
2 tablespoons extra-virgin olive oil
1 small onion, diced
4 cloves garlic, chopped
1/2 pound ground lean beef
1/2 pound ground pork
5 large fresh sweet basil leaves, chopped
2 tablespoons tomato paste
4 ounces tomato sauce
2 1/2 cups boiling water, for rice, plus 1/2 cup water, for sauce
1 teaspoons sugar
1/4 cup frozen or fresh peas
1 cup seasoned bread crumbs
2 cups vegetable oil

Steps:

  • Melt butter in a large pot, pour in uncooked rice and cook for 2 minutes. Add saffron, if using and pour in wine until wine evaporates. Begin stirring in boiling water until rice is tender. Cook rice uncovered. Add salt and pepper, to taste. When rice is cooked take off heat, mix in cheese and 2 eggs. Place in refrigerator, covered, for 2 hours or overnight. Rice must be chilled.
  • In a large frying pan over medium heat add oil, saute onions and the chopped garlic for 2 minutes, add in the beef and pork, and brown. Remove excess grease. Add in basil, tomato paste, tomato sauce , water, and sugar until it all becomes thick in texture. Add peas while still warm, take off heat and set aside. Add salt and pepper, to taste.
  • Take 2 tablespoons of the rice mixture, place in hand and form a small cup.
  • Place 1/2 teaspoon of the meat mixture to center of the rice cup, add 1 teaspoon of the rice over the meat mixture and roll in a ball. Roll the rice ball in the remaining eggs and then roll that into the bread crumbs. Heat vegetable oil to 360 degrees F. Deep-fry rice balls until browned, place on a paper towel lined plate or dish.
  • Before serving garnish with cheese and/or the extra sauce.

1 cup rice flour
1 cup shredded coconut
¾ cup coconut milk
2 cups vegetable oil for frying
½ cup coconut milk
¼ cup brown sugar

Steps:

  • Mix rice flour, shredded coconut, and 3/4 cup coconut milk together in a bowl until dough is well mixed. Form dough into balls, about 1 tablespoon per ball.
  • Heat oil in a pot over medium heat.
  • Fry dough balls in the hot oil until lightly browned, about 5 minutes. Remove pot from heat and transfer balls to a paper towel-lined plate.
  • Pour 1/2 cup coconut milk into a saucepan; bring to a boil. Stir brown sugar into hot coconut milk until liquid thickens, 2 to 3 minutes more. Remove saucepan from heat, cool coconut coating slightly, and dip balls into coating. Cool slightly before serving.

  • In a large mixing bowl, add the rice flour and make a well in the centre. Stir the sugar and water together to ensure it has dissolved and pour it into the flour. Next, add 100ml cold water. Combine to make a dough and knead for 5 minutes into a ball. It will be a bit crumbly and not like a traditional dough but keep working with it. Dust your hands with some rice flour and shape the dough into 12 balls roughly the size of golf balls. Holding a dough ball in one hand, use the thumb of the other and make a hole into the dough to form a cup. Press two pieces of chocolate one on top of the other into the hole and gather the edges of the dough together so that the chocolate is completely covered. Do this with all the dough, then roll each of the balls in your hands until perfectly round, then roll them in the sesame seeds.  Heat the oil in a deep-fat fryer or wok to 165°C, or until a tiny piece of the dough browns in 30 seconds. Be particularly careful if deep-frying in a wok. Deep-fry the sesame seed balls, a few at a time, until the sesame seeds turn golden brown and the balls start to float to the surface, approximately 3–4 minutes. Once cooked, place the sesame balls on a tray lined with kitchen paper to drain off excess oil while you cook the remainder. Serve warm, with the melted chocolate poured over. If you wish, you can cut open one of the balls on each serving and place a strawberry or cape gooseberry in the bed of chocolate.
