3 lb. Roast Pork Rib End
½ lemon
Stuffing:
1 bunch of Italian parsley - chopped
4 cloves of garlic – chopped
¼ cup grated Romano cheese
Rub:
¼ tsp. paprika
½ tsp. salt
¼ tsp. black pepper
¼ tsp. curry powder
1 tsp. of olive oil

Steps:

  • Preheat Oven 350 degrees: Place the meat in the roasting pan and rub it down with the lemon. Combine the parsley, grated cheese and the chopped garlic in a bowl. Find the pocket in the meat and open it with your hand or a small knife. Do not cut all the way through the meat. Gently open it at both ends of the meat and stuff it with the parsley mixture. Place the meat in a roasting pan. Combine the ingredients for the rub in a small bowl. Rub this mixture on the meat. Roast in a shallow pan, uncovered, approximately 20-30 minutes per pound.

3 garlic cloves, minced
3 tablespoons extra-virgin olive oil
1 tablespoon chopped thyme
1 tablespoon chopped rosemary leaves
One 4-pound pork rib roast cut from the loin end, chine bone removed
Salt and freshly ground pepper

Steps:

  • In a small bowl, blend the garlic with the olive oil, thyme and rosemary. Rub the herb paste all over the pork roast and let stand at room temperature for 2 hours or refrigerate overnight.
  • Preheat the oven to 500°. Set the pork in a small roasting pan and season with salt and pepper. Roast the pork for 15 minutes, then reduce the oven temperature to 325°. Continue roasting the pork for 40 minutes longer, or until an instant-read thermometer inserted in the thickest part of the meat registers 155°. Transfer the pork to a carving board and let stand for about 10 minutes. Cut between the ribs, transfer the chops to plates and serve.

CENTER RIB PORK ROAST | JUST A PINCH RECIPES
I started not to post this recipe, but realized that some cooks are a little intimidated with a BONE IN PORK ROAST, & it really is very simple with a few key elements to know first hand. PLEASE MAKE SURE YOU ASK THE BUTCHER TO CRACK THE BASE BONE on the roast, so that after cooking, all you need do is cut between each rib, for easier serving. This roast was 3 1/2 pounds,& was 4 chops, & was on sale, & because I bought so many @ $1.88 per pound, I naturally assumed that the base bone was already cracked, but though they usually do, they did not crack them for the sale SO ASK them to do so

  • Allow Roast to rest about 10 minutes, tent top with foil. Then WITH A VERY SHARP KNIFE, SLICE BETWEEN EACH RIB BONE, DOWN TO THE BASE. If the base was not cracked before hand you will need to work your way around the base to get each chop loose. But it is much easier if the base bone has been cracked by the butcher at the store level. As you can see I did get the chops separated but not without a lot of effort on my part. The Moral of the story is to ASK THE BUTCHER TO CRACK THE BASE BONE AT STORE LEVEL, EVEN WHEN THEY ARE ON SALE. IT WILL MAKE YOUR JOB SO MUCH EASIER AT THE DINNER TABLE. Smile
